You could get similar look with dashes from any newer VW, they are not so hard to fit but that ruins the car completely IMO. Its much nicer to have a genuine soft (not plastic) EU/UK mk1 dashboard, these are really hard to find in good condition and he already has one.
I think you should trim the seats close to the way they came. They have a cool retro look which fits the car and the dashboard is black. Plus beige seats, especially cloth ones, can get dirty pretty quickly. If you use a tweed trim in the middle, which was common in that era, it really hides dirt and stains and looks sharp for a long time.

Nice job Zak. Seats are classic and looks very good on the car. About the trim I'm thinking if its possible for you to find the classic GTI tartan square pattern but with beige stripes or elements to kinda fit with the headliner, the car colour etc. Something like that.
Fitting seats have always been a problem with caddys. I've been slowly building an extended cab Rabbit Pickup(caddy) using the front half of an 84 GTI. Adds about 30cm behind the seats.
Since I've been watching the progress of this build...I had to subscribe to grow the channel...The cream headliner was a good contrast to be pure black carpets...Reckon them seats should also be black to complement the carpets... Consider sound deadening and carpeting the rear panel also to keep road noise from transmitting through... I've built myself quite a few Golf MK1s in the 90s and this takes me back to those days...Did the Interior package also come with the trim that goes on the door between the door panel and the window beadings on the inside...Our versions had them and they help keep the door clean and prevents paint fade when you lean your arms over or on the door as you sit Lastly reckon you should get the bigger centre console that holds the three gauges, and you can add more modern LED gauges for Oil Voltage and whatever you need to monitor with the newer R32 motor...maybe even consider getting the quarter windows that serve as vents as well they have swivel mechanism to open them as the need arises...Just my humblest opinions as aMK1 enthusiast
Correct me if i am wrong but you dont glue down carpet, what if you need go trough wires in near future? You will probably destroy it whn you will be peeling it off
Great build Zak👌 I would keep the middle of the seats completely original. The sites need to be fixed, in and outside, back and sit sections, and I would let them be made out of black leather and remove the knob for bending forward if they don't have too bend over anymore. The headrests I would also keep original.
The Caddy is looking very nice, looking forward to seeing more progress for sure. I think the seats would look nice with cream inserts on the middle section ,black on the bits that see a lot of wear with cream stitching and piping.

I think you need to do the bolsters in dark grey with tartan centres. And also get a velociti dash for tge car
Leave the seats original. If you absolutely have to, id go with ith a cognac colour.

It’s glued to the sound deadening mat & on the edges so it should be fine if any access is needed for the wires
