INGREDIENTS
Paya: Beef Paya: 1 (1.5 Kg) Goat Paya: 10 (1.5 Kg)
Bong Meat (Beef/mutton): 1 Kg 4" cubes
SPICES FOR YAKHNI
Salt: 2 Tbsp
Haldi: 1/2 Tbsp
Ginger: 60 gm peeled in 2 pieces
Onion: One Large peeled
Garlic: 1 Bunch Unpeeled or 8 cloves peeled
Fennel Seeds: 2 Tbsp
Green Cardamom:12
Black Cardamom:4
Bay leaves:3
Pipli: 5 sticks
Cumin Whole: 1 Tbsp
While Coriander: 2 Tbsp
Whole Black Pepper: 1 Tbsp
Cloves: 12
Cinnamon stick: 1 of 2"
MASALAH INGREDIENTS
Fried Onion: 100 gm
Yogurt: 300 gm (If Not two sour then add 1/4 tbsp of citric acid or 4 tbsp of lime juice)
Oil: 1 cup
Garlic Paste: 3 tbsp
Ginger Paste: 3Tbsp
Salt: 2 tbsp
Red chili Powder: 1.5 tbsp or to taste
Kashmiri chili powder: 2 tbsp
Haldi: 1 tbsp
Jyfal Powder: 1/3 tbsp
Javetri Powder: 1/3 tbsp
Kala Zeera. 1/2 Tbsp.
Ajwain: 1/2 tbsp
Ginger Powder: 1 tbsp
Klonji: 1/2 tbsp
Green Cardamom: 8
Basic Garam Masalah: 1tbsp during cooking and 1 tbsp to spread after cooking

Bhai, apkee paya recipe kay sath payoon ka maza he dubala hogaya... i used to use shan masala before, but making it with your recipe came out delicious...everyone loved it... zara mehnut lagee, but end result was yummy.. thank you sir again for this recipe...
Ubaid Razi Bhai, bohat shukriah. Pehlay hamaaray ghar main bhi packet masalah istemaal hota tha, per ub not at all. When I showed my recipes to my wife she agreed not use packet masalah any more.

Thank you so much for liking the recipes. Citric acid is for KHATAAS only. If Yogurt is too sour then we do not need citric acid. But if yogurt is not sour then we can use a pinch of citric acid.

Sir when you are making home spice and authantic. recipes please don't use citric acid harmful for health you can use lemon juice or amchur. That's why l like recipe because of your own spice mix.

AsalamOAlaikum, I saw both your recipes of paya, I have learnt cooking from my father. Your recipes are almost the same except few things, my dad never used yogurt, citric acid, kalonji, ajwaine, kari pata and badyan. Rest all the same. And they turn out very thick n yummy. And we enjoy it with naan or kulcha.
I would like to know that why u use yoghurt and citric acid? As per my knowledge it will bring sourness (khattapan) in the flavour. Is there any other reason?
Khataas is a very important part of all DESI recipes. but what to be used???? Tomato, yogurt, citric acid, lemon juice or amchoor powder????. Depends upon the recipe. We can use either Yogurt or citric acid for Khataas in Paya.
