Baked Oatmeal (Full Batch)
Ingredients:
For the Oatmeal:
3 cups buttermilk (or 3 cups whole milk + 3 tablespoons vinegar)
6 cups rolled oats
1 tablespoon cinnamon
250 grams melted butter
1 cup packed brown sugar (or honey/maple syrup)
6 large apples, peeled and grated
4 large eggs
1 tablespoon baking powder
2-3 cups fruit (fresh or frozen, e.g., raspberries)
For the Berry Coulis:
Frozen fruit (e.g., berries)
Icing sugar to taste
Instructions:
1. Prepare Buttermilk:
If using whole milk, mix 3 cups with 3 tablespoons of vinegar. Stir and set aside.
2. Mix Oatmeal Base:
In a large bowl, combine 6 cups of rolled oats, 1 tablespoon of cinnamon, and 250 grams of melted butter.
Add the prepared buttermilk and mix well.
Stir in 1 cup of packed brown sugar (or honey/maple syrup).
Cover with plastic wrap and refrigerate overnight.
3. Next Day Preparation:
Peel and grate 6 large apples.
Retrieve the oatmeal mixture from the refrigerator and stir in the grated apples.
Add 4 large eggs and 1 tablespoon of baking powder, mixing until well incorporated.
Stir in 2-3 cups of fruit (fresh or frozen).
4. Bake:
Line a baking tray with baking paper, spraying the bottom to help it stick.
Press the mixture firmly into the tray.
Bake in a preheated oven at 180°C/350°F (fan-forced) for 60 to 75 minutes, or until golden brown and springy.
5. Prepare Berry Coulis:
Place frozen fruit in a saucepan and add icing sugar to taste.
Heat over low heat, allowing the fruit to defrost and simmer gently after boiling for a few minutes.
6. Serve and Store:
Let the oatmeal cool in the tin before slicing.
