Speaking as a protection paladin right now My bro I get where you're coming from. Paladens are so squishy for tanks I feel like I have better survivability as a ret Which is sad.
ya brews are hit hard. the biggest reason for me is they have zero 'gathering the enemies' tools. and ring of peace doesn't count. it moves them like 1 yard. clash is on a 1 min. cd and it moves you partially to the target. It's a pvp talent. What brews need is "Chi'ji throat kick ranged kick interrupt" and "black Ox bash that is a radial perpendicular line from your location that you put in between you and the mobs you want to hit in to you. The black ox slams those enemies from behind and knocks them towards you exactly like being typhooned into your melee range and NOT just a set distsance." brewmaster would be played again.
im not pugging a bunch, mostly playing with a group at a slower pace, we are around 2350, and enjoying doing keys together. When I pug though I do obliviously notice not everyone wants a windwalker. I have been kind of preaching to my friends I wish they would just give every class either a brez or lust so there could maybe be a little more variety when it comes to which classes you might want to invite to keys, a monk brez'ing doesn't sound too crazy of an idea thematically but I am probably biased. I don't think that would fix everything of course but maybe some of the "less meta classes" would get more time to shine.
WW main too, 2.1k I completely understand why people dont take us in groups, whilst there has been plenty of times I'm competing or even beating a frost DK in overall dmg it only occurs when things go line up perfectly, if the frost DK used even just half the brainpower going into playing he would have better results.

The real issue with RSham being this high, is that it pushes other Sham specs out. Even if they are good, groups will rarely want to take 2 of the same class on higher keys
You dont "NEED" a frost dk in your grp. It makes it easier on some pulls but you definitely dont need one. I hate when youtuber say stupid shit like that. Only makes it harder for other classes to get invites in +12 and up bc when casuals hear stuff like this they believe it.
Objectively, you don't need one, of course you don't. The problem is that the Group Finder is a semi-blind lottery. You only really see someone's spec, iLvl, and score. Spec determines the kit the person might have. When you invite someone, you're basically placing a bet, hoping they will at least play like the average person on that spec. An average Frost DK will do more throughput than an average... I don't know, insert random shit-tuned DPS spec here. On top of that, they have a lot of defensives and some other useful stuff. Now, your average Frost DK won't use their defensives optimally. But they do have a lot of ways to live, essentially giving you more "rolls" on them making a correct play just because they have more plays to be made then a more sparse spec. So, if you have a choice between a 630 iLvl 2728 score Frost DK or a non-meta 630iLvl 2728 person playing some other spec... you're trolling if you pick the non-meta spec instead of the Frost DK. While it's possible that the non-meta guy will do the numbers an average Frost DK does, they will have to be better than average at playing their spec to actually do it. They might be able to survive just as well as a Frost DK, but they will also have to be much better at that too because they don't have as many tools to do it with. Remember, it's a blind lottery, you don't actually have a clue how good any of those people are. So, of course, it makes sense to pick the one who doesn't have to perform above average to do what you expect and then there's also the familiarity that comes with doing keys over and over again with pugs who play meta specs. A set of expectations develops, a shorthand of sorts. If you pick some rare spec people are unfamiliar with, you suddenly have to improvise in the middle of the key, which... nobody wants that, especially with 0 communication. in the end, though, even if you pick the Frost DK, they're just as likely to turn out to be horribly bad as they are to be better than you expected. But the same is true for a non-meta person, the difference is that their floor will be lower than the Frost DK's, their average will be worse than the Frost DK's, and their ceiling will be lower than the Frost DK's. So, why would you not take a Frost DK? It's a bit like the IQ distribution curve. 100 is average, but for every gifted person who has an IQ of 130, there a person whose IQ is 70. For every dude who can do their rotation while interrupting, pressing their defensives, and doing the rest of what their spec does, there is a guy who doesn't have a clue what any of the mobs do, doesn't even have Mind Freeze bound and thinks Icebound Fortitude is bad because it siphons their Frost power away, making them do shit DPS. Finally, I'm 99% sure that if it's your own key and you have a choice between a 630 ilvl 2728 score Frost DK and some other non-meta spec that doesn't fill any particular vulnerability in your comp... you will pick the Frost DK just like everyone else, while also hypocritically raging at the people who do the same at your expense when it's their own key on the line. The moral of the story: List your own key, make friends, get off the Group Finder carousel.
