I absolutely love goya champuru! Love all the regional foods of Japan you have been demonstrating, but Okinawa has a special place in my heart. I hope you’ll show an Okinawa soba recipe some time!
Ohayo gozaimasu Ryusei! Are there any recipes where the goyu is pickled? Something that I like to do is finely slice a large onion in one or two millimeter thick slices with a mandolin slicer. I then add 45ml of mirin and 45ml of rice vinegar to the sliced onion and keep it in the refrigerator over night. The onion flavor is sweet and sour with a very crunchy texture. I wonder if goya might be good prepared this way too. I am going to a big ethnic grocery store this weekend and if I can buy goya I will try it and let you know how it tastes. Go chiso sama deshita!

This particular dish looks like it has a couple of advantages. 1. All of the ingredients are generally available through an "asian market" of sufficient size (the bitter melon might be the hardest one, considering there are many varieties). 2. It is relatively simple to put together, and 3. It is friendly to many types of diets, most notably there isn't anything that would affect blood sugar.

Oh ive been looking for ways to add bitter melon to my diet. I dont really like the taste to be honest but i know its good for health
