Add the tequila-lime mixture to the yolk mixture, whisk to combine, then pour into the prepared crust. (It’s OK if the crust is not yet completely cool.) You may be tempted to prepare the curd earlier, but don’t do so more than 10 minutes before baking, as the lime juice will start to thicken it, which could affect the bake. **Step 6:** Bake 15 to 17 minutes until the curd is set around the edges and slightly jiggly in the center. **Step 7:** Transfer to a rack to cool slightly, then freeze for at least 2 hours. **Step 8:** After freezing, remove the bars from the pan using the parchment paper overhang and transfer to a cutting board. Made these after seeing the ad pop up on Instagram. Far too tequila forward for my taste, but the saltine crust is a fun idea. Would probably use less tequila or do without
"A Jello shot for people who love themselves." I've never made vegan lime curd but I'm gonna try it with JustEggs™and a sweetened condensed oat milk. I've had some success with JustEggs in baked goods in the past... although Vaughn's recipe calls for egg yolks and JustEggs is more like the entire egg.
So normally lime juice and condensed milk will solidify into like a Keylime pie filling. Does the alcohol prevent it from setting up so the eggs are needed? Would Agar Agar work for vegans?
This recipe is based on a lime curd instead of the classic condensed milk key lime pie filling. I don't know anything about vegan substitutions, but if you already know how to do a vegan key lime pie then you could maybe do something like that? It sounds worthwhile to test
