    Barry! I work at Starbucks and we make our own whipped cream in house using those canisters. You need to shake it at least 10-12 times to get the cream really whipped!

      and shake it vigorously, not those baby shakes. Also have to clean those things very thoroughly. The ones we had at the cafe I used to work at always got incredibly gross because the nozzles can be a pain in the ass to keep clean when you use it all day in a hot kitchen. The ones we had also took 2-3 cartridges to fully charge, but the last one we had to leave in because it won't fully empty when you have the canister full of cream - and if you don't fill it completely with cream you need more NOS to pressurize it properly

      I use isi bottles at work almost daily and if you flip it upside down before screwing in the canister it works way better.

      @@thesteelrodent1796 The standard isi ones are meant to whip 500 g of cream. If you got the big 1L one like barry has ogt here you're gonna need 2 to fully whip it, with one if you shake vigorously you can get about 700-800 grams of soft whipped cream and the last bit is just gonna come out completely liquid.

    You can use the canister to make instant mousses. Make nice flavored base and treat it like regular cream. Maybe a nice raspberry and chocolate mousse parapet.

    For the gas choice, if you use CO2 with cream (or other milk products), it creates carbonic acid which curdles it, and you end up with rancid custard, so they have to use the nitrogen-based stuff instead as it's an inert gas that won't cause the curdling issue... :P

    I also have one of those whipped cream dispensers.
    Whatever you do, dont put any sugar into it together with cream! The sugar will clog the exit and you wont be able to close it, so all the cream will just keep coming out.
    The moments of panic when the whipped cream just wont stop coming is hilarious if it happens to someone else, though

    in the good old days Barry's family would walk into the kitchen looking really puzzled because barry is laughing his head off rolling round the floor . The camera would pan down to a broken or leaking canister , then pan back up to the whole family also laughing hysterically .

    I am in love with this recipe! The idea is brilliant! As someone who prefers savory food over sweet I can see limitless possibility with that ISI whip cream chargers! I don't like garlic, but we can use some other flavoring agent! Like Minty air somehow? Basil air? Roasted cherry tomato air? Lemon air? Chocolate powder air? Vanilla powder air? Pls make a series with these ingredients Barry! Wanna see how it goes!

    This reminds me of the time when I was a barista and needed to refill the cream. I didn’t properly dispense the remainder and opened the top which proceeded to splat cream freaking everywhere 😂😂😂😂 Clean up was a real bitch 🤦🏼‍♀️

    Than my Dad used them in his kitchen, he said they usually took two catridges for the best result (which always seemed like a waste for me but well..)
    They usually used them for sauces, specially Hollandaise, because it would keep it stable for longer. Of course the foam didnt last long but I think that was actually part of the design here..
    (by the way other tricks he would use on fresh Hollaindaise. A) mix some Bechamel in. Or B) mix some ready made industrial Hollaindaise in.

      Once the nitrous has transferred to the main body there’s no point to leaving the cartridge in place. He was right to take it off. Leaving it on just provides an opportunity for damaging things.

      No, you can remove it, those things got a check valve. Depending on what and how much you try to whip you even need to use more than one cartridge, just like Barry had to for the whipping cream.

      Oh, okay! My bad I didn't realise. My old school one you had to leave it on, you could take it off when you wanted to add more gas but for use it had to be left on. That being said that was 20+ years ago!! Thanks for the info!

    Someone already said this but with those canisters you have to shake them like 10 times. I work at Starbucks and we do 5 shakes turned upward and 5 shakes turned upside down. We then let it sit for 1 minute on its side to let it settle. I usually give it another shake before dispensing. Make sure the inner ring is always in the lid otherwise it will go everywhere and not whip. You did a good job emptying or releasing the pressure. It just makes clean up easier.
    I know I am saying the same thing as everybody else just thought I would give those helpful tips.

    These canisters have always interested me, so it was great to see you try it out. I have seen people use it to make sauces into foam, instant mousse and microwave sponge cakes.

    Apparently you should be able to carbonate stuff in the canister (saw this on Netflix iron chef). In that episode they made "fizzy grapes". Would be interesting to see you try that!

    If you don't have asbestosis hands just purchas some really good quality, thick, disposable gloves. You can even double them up if your hands are particularly sensitive.

    When I used to work in the restaurant we had this dessert with Oranges and Bastogne cookies.
    I am unsure if you can get these cookies in the Uk, but I am pretty sure there are different brands that sell the same type of cookie.
    Basically what we would do is make a crumble with the cookies.
    Just make a crumble you'd normally put on top of an apple pie but replace the flour with cookies you've put though a food processor, make it as fine as possible.
    Unlike the apple pie, make sure you do bake this before hand! +- 10 mins should be enough.
    Now if you're lazy you can also just smash the actual cookies to bits and use that as your crumble.
    Put this in the bottom of a cocktail glass.
    And then we would use a mixture for your whipped cream on top.
    It was just whipped cream, a little bit of sugar and some fresh orange juice to your tasting.
    Its easiest to do this in a bowl, taste it to make sure its alright, and then put it in the dispenser.
    Put the whipped cream on the top of your crumble and decorate with fresh orange slices and some zest.
    It was one of our best sellers and people ask me for the recipe quite often.
    They are surprised when I tell them its this easy to make!
    This'd work great with your new whipped cream dispenser! We used to have the same one, just a larger version cause we had to make loads a day hahaha

    Barry you mentioned that you tried to unscrew the top while the vessel was still under pressure. Please don't try that again 😬 that's legitimately a bomb, and if you somehow got it unscrewed you could get hurt and paint all of your kitchen with whatever's inside the dispenser

    Roasted garlic and tomato wrapped in mozzarella ball . Hollow the tomato put garlic in roast in oven wrap in mozzarella place back in oven it's so delicious use any herbs and spices you wish

    From experiance, you need 3 air cans and then turn upside down and right side up/shake about 15-20 times until desired thickness of cream whip is achieved. :)

    I worked in a kitchen using one of those ISI cream whippers..... The minute i saw the instructional video telling you to use one nitrous charge i knew you would get nothing but liquid😂😂😂 at the very minimum you need to use 2 or on a full can 3

    👉👉To the roasted garlic in the jug add some fresh chopped basil and sun dried tomato and let it sit in it for 1/2 hour or so to marinate and get the everything warm in there because when the nitrous hits it it cools it down and you get a nice caprese smell in your bubble.

    I use nitrous oxide (gas and air) all the time and it is a life saver! I dislocate super easy (like around 10-20 times a day) and so often need an ambulance when I can’t relocate them/ dislocate too many at one time and gas and air saves me. I have the veins of a small child so a cannula is impossible without ultrasound in the hospital, so gas and air is all I have. It also makes me think I’m the worlds best comedian lol!

      EDS? I've heard certain types can make you dislocate super easily. Also I too have the veins of a child so I feel your pain with doctors not being able to find them, I have a lidocaine infusion every 3 months for chronic pain and its always a massive hassle.

    Only at the beginning of the cheese kneading, but im guessing youll need hotter water, i used to work at a cheese plant and motz can stretch like crazy when we would toss a chunk in super hot water, we had one piece stretch the whole length of long table in our break room, over 6ft long
