The best chef I have seen on the internet. So laid back. The other chefs are too hyper and full of themselves. Not this one who seems like a nice uncle with great cooking skills. May he rest in peace and make some nice dishes upstairs.

Hi Jack, I tried buying that leg of lamb at grocery store but had no luck but I got the lamb chops, had sauteed the mushrooms and onions together, and cook some fresh string beans for my dinner and everything came out beautifully.

Heh Jack, that is an interesting method of risotto. I just made one the other day with chicken & mushrooms. Left over chicken breast sauteed off with the mushrooms separately. Then put the risotto together with homemade chicken stock, and a glass of sauvignon,adding a little stock at a time letting it absorb before adding the mushrooms & chicken pieces, finished off with with butter & proper parmiggiano reggiano.

Not sure how I missed this one. That's the best/easiest way to make Risotto I've ever seen. It still has some body to it instead of spreading out on my plate. It also looks to have the right "mouth feel" (don't much care for el~dente). I have to try making this asap.

Looks good Im more of a old school risotto kind of guy , but i respect the changing it up and making a dish your own and being creative with the cooking , I think i would have used a nice pepper jack cheese and maybe a couple of egg yoks at the end for some more richness lol and you cant forget the green onions
