My Mom always served salmon patties with milk gravy and biscuits. Sliced tomatoes or cantaloupe from the garden were a great accompaniment. I loved the crunch of the bones.

It makes me happy that I don't have to eat store bought canned salmon because my family does it themselves once a year. We makes a few cases or canned salmon. Always tastes better than in store.
I always get sockeye, I guess it's just more bountiful in our area. Going to try this though, haven't had salmon patties since my grandpa made them when I was a teeny kid.

I know I ate more canned salmon as a kid growing up than fresh ... my Mom made salmon cakes, a salmon loaf and even soup out of it .. still love that stuff! Nice to see u bringin it back to style on here, Buck!

Best recipe. Bought the can of Salmon cheap, separated the broth, skin and bones as a treat for the cats (they loved it) and made with minimum tweaking. Made three sandwiches which were top notch. Thanks for the simplicity.

Chef Buck you on point! My Southern cooking style are so similar. Normally when I make Salmon Cakes, I pair it with grits and cheese eggs, but like you said "Too each its own"

Janet Damet We haven't had grits too often since we moved up here to the northwest 2 years ago. We were visiting family in south Georgia over Christmas and had grits, which was about 6 months ago, and I think that was the last time we had them. My wife has been telling me to cook up some grits and shrimp, and I've been telling her to cook up some grits and shrimp, hopefully one of us will get up off our butts and do it soon.

I used a George Foreman grill sprayed with olive oil Pam . 4:30 to 5 min. did it on a small grill but think the big one is the way to go . Cooks both side at the same time . your recipe looks tasty .

I am so happy I found your recipe! My husband is on insulin, and has to watch his carbs. Who knew salmon patties/burgers would hold together, without bread crumbs, crackers, flour, or potatoes! Great job! I tried it, and they turned out to be delicious! And they held together! Thank you so much! My husband thanks you too! I subscribed! It looks like you haven't made any new videos in a while. I hope you are ok, and that we will see more of your ideas!

My dad use to put mashed potatoes in the mix also with the onions ect, then brown them up. I guess that can be a way of stretching the burgers, or makes them slightly milder for the little ones, but their good, nice and crispy. I guess you can use the dried potatoes too if you want, dip the outside in the dried potato flakes for a nice crunch.

Carol Napolitano great idea--I've never tried adding potato--sounds like a nice twist for folks who might like a less salmony tasting patty

hey Buck, I bought a can of red sockeye salmon by accident one day instead of the pink and the taste was so much better I almost cried. It was not that much better, the part that probably made me almost cry was realizing I was not dishonest enough to bring a pink salmon label from home and wrap it around the red salmon can so I would not have to pay the $7.50 a can for the red salmon.
Your patties hold together very well, I was surprised. Nice color too. I have been making salmon meatballs in a mini cupcake pan I sawed in half to fit into my toaster oven. I was at walmrat this week and they had salmon burgers for $4 a pound. The whiting was $10 for a 4 pound bag, filleted with skin on frozen individually. I can not catch it that cheap.if you hang the frozen whiting vertically in the fridge and let it thaw out and drain real good it cooks up nice as it has less moisture in it, otherwise it is like cooking a sponge. maybe why it is so cheap at the store.
I am in the process of thinking about self publishing a cookbook for a small niche. have you and CG ever thought about making a cookbook ?

JFK EOrder Abolish Fed Res : that's interesting. I've never heard about that. is that a brand or a Japanese type of salmon? I know a lot of northern Pacific Indians who've been eating salmon all their lives but I've never heard of anyone having problems like that. Maybe our salmon don't go all the way to Japan so they don't get into radioactive water.

I don't pull any punches when I critique cooks on UA-cam, so let me say that this guy knows what the hell he is talking about! Leaving the bone in? Hell YEAH! You want some crunch, don't ya? And not that artificial crunch you get when using green onion 'greens'. This recipe reminds me of what grandma used to leave next to the stove for me when I'd come in from a night of....whatever it was I was doing. Trust this guy. He knows his shit.

ive always made canned salmon by mixing it with just mayo and the original blend mrs dash, the yellow one. usually like 3-4 tablespoons of mayo but really just as much as you want, let it sit in the fridge for a couple hours or just eat it right away on crackers, pretzels, chips, bread, plane. its amazing.

I too don't believe in adding flour or bread crumbs to my salmon cakes too! Never put any heat in it. I will try it...I coat my salmon with flour to fry. Will try it without...much love from NJ
