Some people are trying to stay away from corn (and corn starch) - not me - but a good substitute I have found when I am cooking or baking for them is garbanzo bean or chick pea flour. It’s not something you would use alone - it has lovely qualities like corn starch. And when used in small quantities, there is no pea smell. There are also other substitutes, I have just found this one to be the most robust and hearty.

I made this tonight and felt it was a fail. I had the pan half covered when I was simmering it and in the 10 minutes my macaroni pasta wasn't cooked and I was out of liquid.
Added another cup of water and that wasn't enough. Added some more milk and continued to cook down.
Didn't like that my meat felt like it had boiled a bit too long as I was trying to get the noodles cooked satisfactorily.
However, my fail was a hit with my daughter. We fed 4 good servings and she packed up all the leftovers for school tomorrow.
I will try par cooking my macaroni next time to cut down on the cook time it appears to need. I think this is a noodle issue and not a recipe issue though.
Will be taking your suggestion of making the bags of spices. Makes it easier for those days when you have no clue as to what's for dinner and have to make something fast.

I am - just a little - confused. Is Hamburger Helper the whole thing you tasted at the end or the spice and herb mix, or some other stage.
The title 'Hamburger Helper' indicates to me that it is something to help - Hambergers.
I have the feeling I have missed something !
    Oh! btw it looked good.

@@phantomskirts Ah! Thank you. I had an idea that there was a language problem. afaik we do not have that in Britain. We do have (I think) El Paso Fajitsu/Tex Mex kits but I do not have a clear idea of what they (fujitsu/taco?) are, even though when I watch youtube videos of them and think they look good cos the poster - I think - skips over the fundemental stuff and assumes I know what they are talking about.
I wrote some more but delated it because I was wandering a little.

It’s a dish that originated during the meat shortage in 1971.
They mixed cheap spices and a starch like pasta or potatoes to add to the lower quality hamburger to stretch it and make it taste better.
It’s was also a one pot easy meal , it got popular also because more women started to work away from home during the 70s and looked for quick meals to help them out.
So it helped people out in several ways.
The box got so popular that they soon made it in different flavors like lasagna, bacon cheeseburger , Philly cheesesteak and more .
The following year they made tuna helper and then chicken helper .
This time to make more quick meals to sell.
They have continued to make new releases like Asian , pork and more
A period in time they also made fruit helpers to use with fresh or canned fruit.
So it seems like it has helped out very much for the economy of the Betty Crocker company at least 😂 Not so much to the American peoples general health and weight..
