I've been using wyvern milk to negate the bleed damage while tanking attacks. I also noticed that it knocks out way faster if you can make it rage and get it to use the double stomp attacks (and if you time it right, you can outrun getting hit by one or both of the stomps).
My go-to tank is an imprinted carcha with blood stacks to try to heal back damage from the giga.

Since giga doesn't need to actually damage something to get torpor, the best tank for taming process is a survivor running away from it, the hitbox allows you to stay in range to trigger an attack animation while not getting hit (unless they fixed it already). Also I'm not sure if this works in an open field and what speed is required.
Trapping it and baiting attacks also seems like an option, thever tried this one though
