I added 4 normally closed push button switches to each of the 4 potentiometers. This allows me to mute a source, then unmute it without changing volume.

hell yes!! this is pretty much exactly what ive been hoping to find since 2016!! cant believe it took me this long to find. i wanted to find something just like this that was touch screen instead. it would basically mirrior 'Windows Volume Mixer' similar to this DIY build but without being specific before hand of which programs to control. a new slider would display as a program opens and it is removed once the program closes. there would be other functions in the tocuh screen idea such as rearranging the order of sliders by dragging but in this DIY build i definitely like the expandability.

Can i use a pre built device with deej? for example 1). a programmable keyboard from amazon, which has 3 knobs, can I use deej to program those knobs for different volume controls? 2). A device such as fifine SC3 which is essentially a mixer but it has sliders and mute button but it doesn't have a software so u cant route different audio outputs, can i use this device with Deej?
You say that applying 5V into 30A of the breadboard will provide 5V to 30B, 30C, 30D and 30E for potentiometers. Does this mean that on your own mixer there are 5 potentiometers/knobs but only 4 are connected?
Does something like this work with a dac/amp stack (I currently own for music - schiit magni/modi). I'm still unsure if volume controllers can be used in conjuction with a Dac or if you can only use one at a time.

With two audio boards that you build. One that runs your main computers audio and one that runs directly into some sort of software that controls it before the stream gets of. I’m not sure how to do it. But its an idea

You know you don't need a 3d printer right? The developer literally used a shoebox to prototype. Also, just because someone has a 3d printer that can be used for tons of different stuff doesn't mean they can or want to spend hundreds of dollars for a gadget that has a single use.
3d printer was $200 but its not accounted for in cost because its a tool not a part of the project. I'm an engineering student, I design stuff and get use out of it. The case was at most $3 worth of pla plastic. There are services online where you can print out your own models such as the stl files I included in the description if you don't have access to any printer.

What do I do when my potentiometer only go from 0-60 volume and they only respond for the last 10° of turning

Technically you could do it with pinned cables but soldering would make it more durable and leave less room for failure

I found that the backplate wasnt fitting nicely so I edited your model in Fusion 360 and I made it use ME bolts and nuts , but nice design overall 👍
