Brian perfectly described the Dunning Kruger Effect when it comes to mastering a craft. It is a wonderful hypothesis on how to approach learning anything.
And ..
Cork Pop For The Win
Yeah I didn't want to say DK effect, lol.
@@CitySteadingBrews Understandable. In my experience people just look at the first part and mock new people into a craft and totally miss the rest of the model.
Yup!
I started making this recipe a few months ago to prepare for summer and it has easily landed in my top 2. I've literally made 9 gallons of it because it's been so popular with friends even at a young age. I can only imagine how the 1 year tasting will go for the 2 bottles I've tucked away.
Wow... 9 gallons!
😲😲😲😲
Have made a jalapeno mead and found it way too hot and also don't like the "vegetal" taste it can impart. Part of the problem is that these and other hot peppers vary in scoville units making it very difficult to predict final level of heat. Also, I have made a "plain mead" and added one of my own smoked chipotles to a bottle for several days and found the heat level more controllable and love the smokiness of the chipotle pepper. Going forward, my future plan is to make a batch of plain mead and at bottling time, spike one 12 oz. bottle with a few chipotle peppers and allow to sit for a week before removing them. Will then use this "HOT" bottle to add to the plain mead at serving time; or any other mead with fruit etc.. incrementally to get the desired effect. Since everybody has their own preference to heat level, just the right amount can be added to their liking. Sounds like a good experiment anyway.
Very surprised that the Wray & Nephew didn't color the flavor too much. It has such a bold funky overripe banana quality to it. Definitely trying this recipe. Thanks guys!

Woohoo! 👍
Corn pop for the win!
Just a little salsa recommendation: Kramer's Salsa. It was originally made in a tiny Iowa town, but now that a major company bought the recipe, it's being made in volumes and shipped out to many stores.
Cork Pop For The Win!
Omg, I am in love with this!!!
Watching this for the 2nd time and I completely forgot to share something interesting! I've been using 3 gallon fermenters to make my delicious/popular meads, and I sometimes try different things when I rack to 1 gallon fermenters in secondary. I put a cinnamon stick in a plain pineapple mead in secondary and COMPLETELY FORGOT to take it out when I pasteurized because it was a little cloudy. It is absolutely delicious and tastes like grilled pineapple dusted with cinnamon sugar that you can sometimes get at Brazilian restaurants. It's sooooo good!
Nice!
My favorite!!!
nice! This is one that I am looking forward to making at some point.
Great job guys! Cork Pop for the win🥇
About to start making one of these today but with some Hungarian wax peppers I grew, so excited! cork pop for the win!
Love the work you do and this is a great flavor combination! Skol!!
Thanks for watching 😀
I enjoy watching your content. I'm not a brewer and probably never will be. I enjoy your interaction and fun explanation of techniques and methods. Thanks.
CORK POP LOL. I love your show. Great job and i am looking forward to trying it myself someday.
Thanks for watching!
Taking the trip started out with a Mr. Rogers vibe to me before morphing into a little rock 'n roll. Love it. Fair warning that I'm just an oddball
That was the idea.
Oh! Good news! I was wondering about this batch. I would love a tasting over ice in the future. I'm okay with a chilled mead, likewise, chilled stones, or just chilled in the frig! I'm obsessed with this recipe and was waiting for this review to try it. Really looks beautiful.
Oh my goodness, this one has made me VERY popular with my fishing buddies!!! Thanks for the great info, the many laughs, and just feeling a part of a community! Your many hours of work are VASTLY appreciated!
Happy to help!
Cork pop for the win! I'll have to try adding some pepper once mine are ready for harvest, should contribute some tannins too I guess.
😂😂😂😂
5:14 "What's wrong with you?"
Sounds very interesting
One of my favorites for sure.
I do enjoy the Matrix style flashbacks!
Cork pop for the win!
Thanks so much for making these. I can see a series of annual (or so) videos, where you take your reflections on the one year tasting, make a new, improved version, and then give the one year tasting on that.
Not a bad idea!
Cork pop for the win!!
Woohoo!
For the win indeed :)

Cork Pop For the Win
woot!
I made this last year when your video came out and that Nov we had a mead tasting with family, It was the winner out of 5 different Meads. Love it! Thanks Y'all
Awesome!
truly: cork pop for the win!
Woohoo!
This and the viking blood 2020 is possibly my favorite recipe of yours. It's so well balanced and nice.
Fine choices!
Cork pop FTW!

After watching this, I too want chips and salsa. Come to think of it, pineapple salsa...okay, now I'm hungry. And thirsty for spicy mead. Thanks for that LOL🤣
Lol
😂 I just asked you about this brew a few hours ago 😂
I'm amazingly mad at my stomach for not being able to enjoy this!!! 😢😢😢😢
I'm glad you posted this, I'm working on a hot honey mead with habanero and jalapeno hot honey, I'm just making a traditional mead and then using the hot honey to backsweeten it once its done
The premade hot honeys often have preservatives, just check the ingredients, but if it's just for sweetening, should be fine.
@CitySteadingBrews Thanks for the heads up! Will remember if I do it again in the future but I made this hot honey as a cheong-inspired syrup, nothing but honey, jalapeño, and habanero in it.
Mead of fire breathing could be a fun D&D plot device, so I bet you’ve done it already
Nope! All yours.
That, and a bag of holding to carry them in.

I am in the process of making your “how to make your first mead” mead (lol) and am in the conditioning phase but I am getting worried. I checked on it today and the mead seems to have gotten darker and is remaining VERY hazy. My process has been as follows:
Day 1: made must according to recipe and got a starting gravity of 1.120
Day 2-22: plenty of action occurred in airlock. Swirled gently every couple days to help degas
Day 23: action in airlock stopped so I took a reading which came out to 1.015. Swirled to ensure gas wasn’t causing a stall
Day 28: Took another reading and it was still 1.015 so I racked to another 1 gallon carboy. Note due to a lot of lees and the fruit I had a less than a gallon in the carboy.
Day 42: (today) looked at my mead and it seems darker and hasn’t gotten any clearer (I feel as though it’s actually gotten more hazy)
Any idea what is going on? Should I be worried that my mead became oxidized? Any advice would be much appreciated!!
It "could" be oxidized but... unless you introduced oxygen in degassing it's not likely. As for clearing... some never do and some take a long time.
If I had the resources and space I would try to make that. I love spicy things! Cork Pop for the win!
Yeah this was a good one.
Cork Pop FTW! 😂
😎👍
I've been waiting for this to come out for a couple weeks. My first brew in capsicumel is pineapple jalapeño. It's currently clearing and I have no idea if I'm going to like it. But as a mixologist, if I can finish the bottle, I can find something to appreciate
Hope you enjoy it!

Cork pop for the win! Now, please show the poblano dish.
Not on a brewing channel 😀

cork pop for the win and i don't know why
Lol
I just made a post today about how meads change over time, and if you don't expect it, it will shock you at times good and bad both can happen. For me if you like/love it at bottling time don't wait just drink it and don't feel bad about it. after 42 meads I have had them age amazingly and had some meld into meh. I can't tell you what is gonna go which way lol. It would be cool if I could but I have learned how to manipulate it to be more pleasant, but it is still a crap shoot on which flavor will take the lead over time. I have this issue because I am a mad chemist with my flavors and mix more than one fruit in almost all meads or a mix of fruit and spices. I have to expect the unexpected hahaha. Just glad over time I have gotten better and learn from my mistakes or shortcomings.
Will you guys put a video out on making elderberry wine please?
If we ever have enough, there's a good chance.
@@CitySteadingBrews Thank you!
Do you guys have any advice on putting tree sap into brews to get that flavor? Or something similar?
Can't say I have ever even tried... sorry.
Cork pop for the WIN!!!! Lol
😜👍
Yeah, I've had wines and other brews have fall out. It's not a big deal like Chernobyl.
Chocolate covered cherry wine turned out fantastic!
Pineapple & habanero sounds pretty good to me!
Stuffed poblanos are one of my faves too, I stuff them with refried beans.
Cork pop for the win, lol.
😉👍
Have you guys thought about brewing a bell pepper mead
I dod poblano once and it was too vegetal. I would imagine bell pepper would be much like that.
Isn't the punt in the bottom of bottles for a similar purpose?
Similar to what?
Beside of your table grape wine, do you ever make some of your favorite brews (10 - 11) for your enjoyment?
We have so much in storage.... we really don't brew off camera much at all anymore.
I'll quit learning when I finally retire from this life and take a dirt nap.
Do meads in general taste better cold?
Personal preference I would say.
What if for all your tastings, you each have a cup room temp and a cup on ice? Make that the standard from here out? I'm interested what you would have thought if it were iced!
We did that and it made them too long.
Hey guys, have you ever tried running an experiment of MAXIMUM OXIGENATION?
If not, maybe an idea for a new video? 2 (small) batches of the same drink (something fruity as I read oxygen can increase floral and fruity flavours), one batch shaken vigorously all throughout fermentation, then straight up splashed/poured into the secondary, just going wild with it. And then taste testing both out after a month or so but not too long for the oxygenated one to become dull/flat.
It'd be an interesting experiment to watch for sure.
Nope and I don't recommend what you suggested. Can lead to oxidation.
By the sounds of it, a splash of that capsicumel in a homemade salsa would balance and bring some real complexity to it phenomnomnomally so 😂
I agree.
How often do you end up re-making a recipe because you like it?
Lately we've only been brewing for the show. LOTS of brews in this house.
Aaaaaaaaaaaaaaaaaaand Cork pop for the WIN ;)
Woot!

😀👍
Have you ever considered making a metheglin/capsicumel? A methcapsegin or a capsmethumel if you will.
Not really. Just never thought about it, lol.
Brian, I was afraid that I offended you, by talking about a subject that isn't "UA-cam family friendly"
I was trying not to be overt...
😅
Anyway, hope all of your channels see great success!❤
Pop Corks and Win!
What's your guy's solution for accidentally adding way too much sugar?
Dilution is the only way really. We also weigh and measure everything to prevent that.
Cork pop the win
😎👍
I have found that any of my high ABV meads are better on ice.
I made this recipe but used 3 habanero's, seed and all, and it is so hot it is ridiculous. I plan on making it agian but only using a half of one.
With the amount we added, I thought the heat was perfect.
corkity poppity for the winnity
