Can we substitute Korean pears with American pears?
I am not sure if western pear has a similar enzyme. I recommend to use half tablespoon of ground kiwi. Make sure to use small amount of it, because kiwi's enzyme is much stronger than Asian pear's! : )

Can I use pork instead of beef?
Why not? Use thinly sliced lean pork and adjust the salty and sweet taste. : )
Great recipe! Do you think pineapple juice could work as a replacement for the pear juice, or would the flavor be too strong?
Small amount of it should be fine, because pineapple also has an enzyme that tenderizes the beef : )
