    About a month ago we were on the road early in the morning. We stopped at McDonald's for breakfast. The four of us ordered a McGriddle combo meal. Total was 54.00. Never again.

      I know, it’s gotten so crazy expensive! McDonald’s breakfast is still one of the more affordable options but the combo meals are so pricey! We usually just do sausage and chicken biscuits.

      We get things from McDonald's occasionally, but I like to do the sharables section of the menu, and use my app. There's almost always a coupon for 20% off in there.

    I do intuitive eating. There are times when I feel like all my body needs is vegan food. Then there are times when I know that I need comfort food.

    I remember that the McDonald’s closest to our school used to have $1 Happy Meals on Tuesdays. My best friends’ mom used to get them for us frequently, but we were only ever allowed to go on Tuesdays. Then when we were first married and didn’t have much money, I used to use the spare change in my car to take my kids and buy a 3 pack of cookies for $1. I would give them each a cookie and let them play in the Playplace when it was too cold to play outside, and we only spent $1. I can’t believe how expensive it has gotten lately.

    Perfect timing, watching as I finish up my grocery list and meal plan. Asking y'all to please pray for me. I've had sinus infections off and on the past month and a half, which have been causing severe migraines. I have another sinus infection. I have a CT scan on the 27th of this month and to see a neurologist about the migraines. I'm nervous about the CT scan. I ask y'all to please continue to pray for me. Thank you in advance.       I'm a cancer patient. CT scans are easy peasy. The machine is like a giant donut the roll you in and out while it slowly scans like an X-ray. I have had at least 20 done and I am claustrophobic. That machine never bothers me.

    I learned how to make this easy chicken casserole in college and have made it ever since. My family loves it!
    Shredded chicken
    1 can cream of chicken
    1 can cream of mushroom
    .5 cup sour cream
    Mix together
    Top with crushed Ritz crackers and melted butter (or French fried onions)
    Great meal to take to someone in need.

      That’s the recipe I use too. We are actually having it tonight from a rotisserie chicken we got at sams over the weekend.

    3 fabulous meals, with major leftovers for me, for around $20! I cannot thank you enough for doing all the legwork , Mindy.
    Extra veggies can be added, extra firm tofu, faux chicken ( Quorn pieces are the best. IMHO. ), spaghetti squash to the spaghetti … you provided a unique and substantial springboard and I can dive right in!

    I ask my Walmart when they put their rotisserie chickens on sale and then stock up then! Take the home, debone and store in freezer bags!

      I always get my rotisserie chickens at sams. I usually go every 3 months or so. Break down the chickens. Eat some that day. Freeze portions for chicken salad, chicken casserole, chicken Alfredo, etc. Then I use the carcass and can broth. The chickens are $4.98 at sams and are twice the size as the regular stores.

      @@lynnhager7763I went to Sam’s yesterday and saw the price of the rotisserie chickens. They’re cheaper than a smaller raw chicken. I’m going to go back and get a few but I couldn’t get them when I was there.

    I completely agree with you about being careful with the "healthy" label. It really can mean different things to different people and it's SO easy to fall into eating disorders. ALL food is good for energy and pleasure. Understanding how different foods impact our bodies and making choices that help us feel well and strong is key. ❤

      I don't think you sincerely believe all food is healthy... ultraprocessed foods have so many downsides that are contributing to horrible health issues in the US. We let you have the freedom to choose to make poor choices in this country (eg smoking) but that doesn't make it good or healthy or wise or beneficial.

    Thanks for the printable and I have to tell you I bought the Wal-Mart English muffins and I will try the peanut butter on top with the bananas. I only need 1/2 of a muffin in the morning but great idea from last video! Also bought the penguin cheese crackers and they are great! 😊

    Yes healthy definitely means different things to different people. For me healthy means protein, nature's carbs, unprocessed, no sugar. I aim for 80/20. I do have some sweets and processed junk food, but I keep it in a sensible amount

    Definitely agree with you about defining the term "healthy" as being an individual preference. For me, healthy is as simple as eating natural food vs. processed food. I try not to make it more complicated than that because it stresses me out.😅

    Perfect timing! I'm sick and hubby went shopping for groceries to make me a chicken soup. I had 2 baked chicken breasts OR a rotisserie chicken on the list. He brought home 2 rotisserie chickens 😂. Now I can plan dinner for the next few nights 😊

    I currently have chicken and rice dish in the oven right now. I used the knorr broccoli cheese rice mix with diced chicken and a few extra cups of broccoli crowns. Sometimes I'll top it with extra cheese but this time I just mixed it in. Great video and great ideas for dinners.

    Dear Miss Mindy! I think you and Daniel have an inside line to the Holy Father! After a few weeks of some rough stuff, things are starting to look up!     I make my own rice cauliflower by chopping fresh or frozen cauliflower. The stem works fine for this. You can use a food processor but I have gotten puree so I prefer a hand chopper.

    My husband and I decided to treat ourselves yesterday to combo fried rice with a side of egg rolls from our favorite Chinese restaurant for the grand total of $27. 😬 That same treat used to cost us around $20 dollars pre inflation. Missing the good old days. 😢

    I love casseroles like chicken spaghetti. Unfortunately, my husband does not like casseroles. I grew up having American goulash. I love it, tuna noodle casserole, cold pasta salad with tuna. So delicious.

    I am a huge fan of all flavors of Rice-A-Roni. Tons of meals in my $5 or less menu for 4. I always find them for $1 or less per box. I also loo for rotisserie chicken that they are ready to get rid of for $4

    On the topic of the cream of soups, your preferred way is how I do it most of the time. Other times I cheat and use a gravy mix packet or two. Sometimes you can find them in lower sodium and I'll buy quite a few for the pantry.

    Love my Rondo. I ordered it a while back when you gave us a code for a discount. My most used pan. I cook just about everything in it. have a small kitchen with limited cabinets so I just wash it and sit it back on the stove for the next meal. It is so easy to clean also.     I make my rice a roni with no butter but chicken broth instead of water. Makes up the good flavor you are missing with the butter. Great video!!

    I'm so glad I watched this video. An hour ago I put 4 big chicken thighs in the crock pot skin side up. Bone in, because I don't trust boneless thighs for some reason, and sprinkled salt, paprika, and celery salt and set it on low. I would have added pepper, but I couldn't get the danged tin open. Evidently I did it right!

    Hey Mindy I love watching ur show. Was wondering if u had any suggests (recipes) for me to use that r high in protein and low in carbs that very little pasta and rice. I’m a type 1 diabetic for 46 yrs. My hubby and I love chicken and ground beef and sausage. He eats my diet but has no dietary restrictions. Thank u for all ur inspirations. And way to go with all the budget friendly ideas. Please keep them coming. Oh and we r both on disability and have a very low income. But by the grace of God we r debt free and own our own home. God is GREAt

      I've been substituting Trader Joe's kohlrabi "noodles" (its pure kohlrabi that is spiralized or something to make it like spaghetti strands). I'm sure you know the same trick of using zucchini or yellow squash, or spaghetti squash as a substitute. You can mix in some regular pasta for your hubby if he prefers that. They also make a hearts of palm "pasta" and a hearts of palm "rice" (again its just pure hearts of palm). Those substitutes allow me to make almost any pasta dish. I do a lot of cold "pasta" salads, but I substitute cauliflower (I use frozen that I microwave) and mix in roasted red peppers, olives, pepperoncini, tomatoes, cucumbers, onion, chopped up deli meats, cubes of cheese (you can basically put anything from the pantry or refrigerator in there!) and mix is up with Italian dressing.

      I just skip the pasta and rice altogether and make very simple meals with meat and veggies. We also eat a very simple side salad most nights. We put the veggies in the oven with oil and salt and pepper. Lastest was asparagus. Hubby loves it! He even made it himself one night when I was gone.

    As you were showing the chicken spaghetti I was chanting “please share a printable, please share a printable” and then, bam went the printable! I am taking it to shop tonight for my busy week. April and May is its own real thing if you have school aged kids. IYKYK! Good luck with your bunch.     I believe it was either jr high or high school we had cooking classes, the go to for a quick recipe was drained tuna mixes with cooked spaghetti, celery, black olives & mayonnaise all served as a cold dish. Great for the summer.

    I'm glad your kiddos like baby corn! I've never managed to developed a taste for them myself. I don't...trust them? 😄 I do love water chestnuts and bamboo shoots though!
    And I agree! Planning is the hardest part -- picking recipes that go together so that you use up what you buy instead of having food leftover that might go to waste. I thought it was great that you did a bare bones approach to the meal plan and then gave suggestions on how to incorporate more vegetables/ingredients with different nutrients if people want to.

      I’m with you, I’m not a fan of the baby corn and also couldn’t answer my kids’ question of where they come from 😂 but if it’s a veggie my kids will eat, I try to get it on the menu!

      Baby corn is just normal corn on the cob but harvested before it matures.

      I’m with you on the baby corn. I look at baby carrots the same way. I know the carrots are “machined” that way but somehow baby greens from my garden seem more appetizing me than baby corn.

    We had your chicken and Rice-A-Roni tonight. Well, sorta yours. LOL I had chicken flavored Rice-A-Roni, added chicken I sauted in the instant pot. Added the cream of chicken but nixed the sour cream (I don't like it) LOL. We couldn't decide on a vegetable so I decided to add some choped red, yellow and orange bell peppes that I sauted in the skillet i cooked the rice in. They still had some crunch and was a geat fit. Being such a picky eater it's hard for me to find recipes online. Thanks Mindy.

    Great ideas! Keep up the great work. We love chicken spaghetti too. Sometimes I add a can of Rotel tomatoes and peppers with the soup to give it some kick. So good and freeze beautifully!

    Great video, Mindy. The chicken spaghetti casserole reminds me of a dish that my mom made for us when I was little. It was super easy and tasty but it was just spaghetti, cheddar cheese and butter. It was so simple but we loved it. Thanks for always bringing the easy, budget-friendly and delicious recipes!

    when I first started buying kids meals I bought one meal for 3 kids to share. There were 6 nuggets in it and it had French fries and a bag of cookies. It was 99 cents in the early 1980’s. I had 3 babies in one year so that was plenty until they were about 6 years old and they went up to 3-4 nuggets apiece. Life has changed so very much.

    Last Rotisserie Chicken I bought was Bloody in the Middle. Made my stomach turn. Won't be buying that for a while. Your meals look good. Love your video.

    love your ideas for making a meal a little more nutrient dense. I also have found that when you try to change too many ingredients, it does taste entirely different and not usually in a good way. I love your sensible approach

    The teriyaki stir fry would probably be really good with spaghetti squash in place of the pasta, especially in winter when it's super cheap.

    Made the chicken and rice tonight, everyone enjoyed ❤. Thanks so much for the recipe. Did add panko bread crumbs and grated parmesan cheese on top. Took a little longer to bake about 40 minutes.

    Made the chicken and rice just now. Took your recommendation at end to add in peas n carrots. Did add minced onion, onion powder and garlic powder. So Good!!! Will make again. Plus, our kroger has the rice a roni for a buck this week. Beats the walmart price here.

    Basic Maccas happy meal is $5.75 here at my local... But prices change, sometimes drastically, from suburb to suburb here in Australia!

    Re: the "hibachi noodles"... Make sure that you toast those sesame seeds in a dry pan before you sprinkle them on. Helps increase flavor.

    I would love to use more Greek Yogurt, but as it's so natural it doesn't have such a longevity and it turns meals bad faster. It's perfect for lunchovers and same day meals though , love it!

      Does it? Yoghurt almost never gets bad in my fridge unless some kid decided to put a dirty spoon into the container e. g.

      @@arraybabe8514 oh I see. I've used it in chicken casserole but my hubby doesn't like it as much as sour cream. I hate sour cream. Anyway for us it lasted fine. It's just the 2 of us so it takes us a few days to eat a casserole.
