Do you always have to soak Black-eyed Peas before canning them or could you do them like you can other dried beans without soaking them overnight? Just curious. You always are so great about explaining the canning process. I would love to see other canning videos by you. I trust everything you can and cook. You have never steered me wrong or your Mama, for that matter. Love y’all!! Also, what do you do if you have a jar break during the canning process? Do you have to stop everything at that point and bring it down off pressure and then reprocess the others?
What happened..? I followed every detail... When filling jars with peas I kept them about 11/4" - 11/2" below the top and then filled the jars with juice to right at 1".. (liquid was covering all the peas) when all was through cooking and cooling ... I had about a "layer" of peas that were not covered by the juice..just brown and dry looking? What/if anything, did I do wrong?
I just through together some items I had in freezer to make stock.... ham bone, bits of celery and onion, and then added garlic powder and salt/pepper to taste.
I grew up eating dried beans. Black eyed peas are second to only pintos. Give me a cup of peas, a cornbread muffin, a little cole slaw and a slice of onion and I'm happy.
Don't your beans need space to expand while cooking? Perhaps it was lentils. I saw a few videos where they recommended you only fill your jar like 1/2 or 2/3rds full. My mom is particular to beans, and I like them, but to me, beans are beans, I don't favor one type over another.
@@gregscumberlachiakitchen I knew they tended to swell, but I was not sure if soaking them over night prevented them from swelling during canning. I've seen videos where people just canned them with out soaking them over night. So I guess the soaking is optional, but I think soaking them is supposed to make them more digestible. I love some black eyed peas with ham or in a soup. Thanks for posting your video.

Dawn, you do not need to soak them, In fact my pinto beans I didn't and I usually don't my black eyed peas. I'll be doing more canning videos soon.

Nothing wrong. They will be perfectly fine. Just add some water when cooking. Mine do that too

They weren't dry, I soaked them overnight so they had expanded.

your canner boiled dry....yikes
it didn't boil dry? you can see the water when I take out the second (bottom) level of jars.
