Hey stranger! Good to see a video. Great idea with the roaster and the rack. I have that same sheller. I grew purple cow peas this year and they really produced, even during our very dry season this year. I let most dry on the plant this time and just shelled and stored them that way, I will probably can them this winter when it's cooler. Look forward to more videos!

Although I have watched this before, I can't remember if I commented. Would just like to tell you how great this video is. It is so short and to the point I could cry. People who have gardens and can their produce, etc. do not have time for those loooong videos. If they are still babbling about anything but the title of the video 4 minutes into the video, I'm gone. Maybe I'm grouchy today, but I just had to say thanks for this being everything I wanted and needed to know. Jesus bless!!!
They do that because youtube won't promote videos that are less than 10 minutes long. I'm with you, I know that folks are short on time and I respect that, even though it puts my videos at a disadvantage with youtube.

We've been staying busy alright. I hope to redo some of those old videos now that I have a better camera. Some of that video and audio is absolutely awful. Your videos are always perfection. You truly amaze me.
Been missing you. Recently moved to manufactured home & have smaller stove. Need every inch of stove area for all the pots. Decided to use crock pot to heat lids & rings. Works well. Hope it helps.

DixieGirl9876 Thanks DixieGirl. Yard Sales, Flea Markets and our local Saturday night auction are my favorite places to shop these days. I especially love the auction. They sell what they call Lots (Which at first glance normally looks like a big pile of boxes full of junk) for from $3 to $5. My neighbor bought one because it had a few tools that he wanted in it. As it turned out it had 5 boxes of canning jars in it too. He doesn't can so he brought them to me and I was thrilled to get them since jars are now almost $11 a case here. I'll be keeping my eyes open. :-)

A pet peeve of mine is long videos where the author just wants to grow old with you :) I like your videos because they're quick, lots of information, you just go through the steps in a complete, concise manner and I trust the information you give. Carlota Chmielewski I share your pain when it comes to the long videos. That's why I don't make them that way. I do my best to make every second of my videos count. To borrow a phrase from Bobby, I want them to be entertaining, educational, informative, or just down right funny.
I grew these last year but didn't know how to preserve them and how to easily shell them. This helps! Question: Are the beans mushy after canning? What do you use the beans in? Eat plain? Put in soups?
I just found you not to long ago and love your vids and gagets and one I like the best is the food mill that attaches to the counter or table. I am going to get me one the hubby just don't know it yet (lol).
Timely video for me Susan! I just got a pressure canner today and a Ball canning book as well! I did not know that about the lids but why mess with success?! So Ball sells a torque wrench for canning lids? Interesting! I give this video a purple hull pea green thumbs up! ;-)
mediamaker2000 So now you'll be canning under pressure :) Ball claims that after some recent studies that they can't see a real difference between heating the lids and not. So they're saying you don't have to heat them any more if you don't want to. They also say that if the jar doesn't seal, *ahem*, to reprocess the jar using ANOTHER lid.

The only info on the roaster is that it was made by GE. I'm not sure how many quarts it will hold. I bought it several years ago at Thanksgiving and it really comes in handy when canning
Next up for me....Turkey Roaster and a Mr. Pea Sheller. A planting of purple hull peas are already planned for next year's garden. I might try a planting this season but it will be tight.
acscolo Those peas are fast, you can pick them in about 60 days and that pea sheller makes light work of shelling the peas. Good luck with your garden!

Thanks Robb, Bobby improved the lighting by replacing a small window with a huge picture window! We were surprised at the beautiful view we have from the kitchen now and have lots of projects in mind out there for future videos. We hope to be back on a regular basis now.

We had a hectic schedule at planting time and he was afraid he wouldn't be able to nurse them through their infancy so he decided to save the seed for next year. There's tobacco fields all around us here and I see it is close to time to pick it. I have some pelleted hybrid tobacco seeds i'd like to try too. Nice seeing you again!

Dutchbucketsbykirklee Yes, you don't need to leave the rings on the jars. The lid is sealed sufficiently and it won't fall off. If you leave the ring on the jar it could rust and make removal very difficult if not impossible. Welcome to the world of canning!
I have not done much canning, yet. I have mason jars on my garage shelf from two years ago. I did not do as well growing tomatoes as Bobby does. I did better than I have ever done, but gave too many to friends, family, neighbors and ate too many before they got into the house. I re-purposed my backyard of St. Augustine grass and quadrupled my dutch buckets. I think I'm going to need more mason jars. Thanks for your time to teach.
Wonderful idea about using the roaster! At the risk of sounding silly, I have to ask: what causes the scum from the peas and is it otherwise "safe" to eat it? Does removing it affect the flavor or nutritional value of the peas? Did you remove it prior to canning for aesthetic or functional reasons? You are terrific at explaining why you do what you do and I have missed your videos. Thanks!
Moonstorm0551 The scum is starch. It's safe to eat but geez, it's ugly, lol. As I see it, the main problem of having that scum happen in the jars is that it expands so much that it is very likely to push out of the top of the jars, with the possibility of residue getting under the lid and preventing a seal.
So....is this an advantage over freezing peas? How do you prepare your peas after you open the jar? My wife cooks the frozen peas for bout 8 hrs in crock pot. I don't want to wait all day to have some peas with my lunch !

Hey Lady Bug, Good to see you again. I have been trying to find the "top pick pinkeye purple hull peas" for the longest time...and still can't. I found "Quick Pick Pinkeye Southern Peas" at Victoryseeds.com. I am not sure these are the same thing. I used the same seeds you talked about from the HomeDepot and they were definately not right. mammaw thimble I ordered my seeds from Southern States Cooperative. They are in their catalog as "Top Pick Pink Eye Cowpeas". They didn't charge me shipping when I ordered them. I've heard that these seeds can be hard to come by, at least in small quantities.
***** I think it would be easier to find teeth in a hen than find these seeds. This adds proof to the pudding that seed saving is worth its weight in gold. Thanks for all that you do.

We had a hectic schedule at planting time and he was afraid he wouldn't be able to nurse them through their infancy so he decided to save the seed for next year. There's tobacco fields all around us here and I see it is close to time to pick it. I have some pelleted hybrid tobacco seeds i'd like to try too. Nice seeing you again!

I am a newbie. Did you say you remove the rings from the jars ? Is the seal from the lid all you need and just re-use the ring ?

Dutchbucketsbykirklee Yes, you don't need to leave the rings on the jars. The lid is sealed sufficiently and it won't fall off. If you leave the ring on the jar it could rust and make removal very difficult if not impossible. Welcome to the world of canning!
I have not done much canning, yet. I have mason jars on my garage shelf from two years ago. I did not do as well growing tomatoes as Bobby does. I did better than I have ever done, but gave too many to friends, family, neighbors and ate too many before they got into the house. I re-purposed my backyard of St. Augustine grass and quadrupled my dutch buckets. I think I'm going to need more mason jars. Thanks for your time to teach.
Wonderful idea about using the roaster! At the risk of sounding silly, I have to ask: what causes the scum from the peas and is it otherwise "safe" to eat it? Does removing it affect the flavor or nutritional value of the peas? Did you remove it prior to canning for aesthetic or functional reasons? You are terrific at explaining why you do what you do and I have missed your videos. Thanks!
Moonstorm0551 The scum is starch. It's safe to eat but geez, it's ugly, lol. As I see it, the main problem of having that scum happen in the jars is that it expands so much that it is very likely to push out of the top of the jars, with the possibility of residue getting under the lid and preventing a seal.
So....is this an advantage over freezing peas? How do you prepare your peas after you open the jar? My wife cooks the frozen peas for bout 8 hrs in crock pot. I don't want to wait all day to have some peas with my lunch !

Hey Lady Bug, Good to see you again. I have been trying to find the "top pick pinkeye purple hull peas" for the longest time...and still can't. I found "Quick Pick Pinkeye Southern Peas" at Victoryseeds.com. I am not sure these are the same thing. I used the same seeds you talked about from the HomeDepot and they were definately not right.
