Hi - I've wanted to do this recipe for some time. I did it today following the exact ingredients and method - except I added just 2 tsp of methi, not 2-3 tbsp. I found the masala at the end very harsh and I think it must have originated from the paste. I blended it very smoothly - all the ingredients were very fine. Could it be that your sister roasted the 1 tbsp of coriander seeds and 1 tsp of cumin seeds first? Or did they go into the blender as raw seeds? I am sure I followed the recipe and ingredients exactly so I am wondering what can be wrong. Thanks for any advice Chetna.
Dried methi leaves as per the recipe. I think Chetna, the cloves,,cinnamon and cardamom in the paste would have been better left whole. I tried Rick Stein’s vindaloo recipe many times with similar harsh results until I left the masalas whole. Did your sister gringvthem finely into the cashew paste or leave them whole?
@@steveskidmore849 Yes she did grind it all together. I have made this many times and so have many people but this is the first time I have heard this feedback, if you think leaving out whole spices will help then do try it that way next time. Hope it turns out perfect next time x

Btw, you can buy vegan yoghurt:- 600g par boiled new potatoes with skin on, pricked Make into fine paste: I tbsp coriander seeds I tsp cumin seeds 1” cinnamon 4 cloves 1 green cardamon pod 8-12 cashew nuts Water for paste In frying pan or kadai: 2 tbsp oil Shallow fry potatoes to give golden brown colour on skin - set aside 2 tbsp oil 1 bay leaf Pinch of hing 1 large open finely chopped Cook until golden colour Add 1 tbsp ginger/garlic paste Add paste, cook for a minute Add 1 cup of lightly beaten yoghurt, in portions so as not to split Add: turmeric, chilli powder, salt Return potatoes then add 2-3 tsp kasuri methi and 1/2 tsp sugar Mix, add around 100ml boiling water to bring flavours together. Cover with lid for 10-15 minutes, check consistency. Add water or reduce as required, add fish coriander and serve.
Made this recipe tonight for dinner and it was really good! However, I don't think I ended up with the same flavor as I couldn't find fenugreek leaves and substituted fenugreek seeds instead (I ground them with the coriander/cumin seeds). I will have to re-make when I can source the fenugreek leaves!
Ooh yes please try it again with the leaves, the seeds taste very very different to the leaves! Next time you can skip the seeds as well and try it like that!

You could serve this alu with tadka dal and rice or chapati but you can also serve this with only chapati as well!
