    I've made a number of your cheesecakes, each one better than the last. My favorite so far....peach cobbler. I made one yesterday. Now, this one...I cannot wait to try it. Thank you for the gorgeous recipes!!!!

      You won’t regret it! Just keep in mind that it is very sweet! If you like it less sweet you can reduce the filling by half!

    Hey if I don't have a spring form pan or a removal bottom can I use the graham cracker crust pans already with the crust in it

      Hi, I guess you can do that but you would need about 3 or 4 of these because they do not have enough room for all the filling. If you have regular cake pans you could try to make a cheesecake in it it would be a little tricky to remove the cheesecake but I have done it before. Grease a cake pan and then prepare parchment stripes that help you remove the cake after baking. I use two long stripes of parchment paper that I fold multiple times into a 1 inch thick string and place it into the cake pan crosswise leaving the ends hang out of the cake pan by 3 inches. Then cover it with a parchment round. Fill in the crust and bake it. When the crust has cooled fill in the cheesecake batter and bake it in a water bath. No need to cover the cake pan with foil because it has no openings on the bottom! Let me know you you did!

      Hey, Thank you for reaching out! You simply wrap the cheesecake pan with a few layers of aluminum foil and place it in a bigger baking dish filled with about an inch of hot water. I like to use a 12 inch round baking dish for the water bath and I cover my cheesecake pan just with a silicone baking mold. You can see it here in this newer video at minute 3.     I'm making this today. How will I know when the cheesecake is done? I'm gonna use a 9" springform

      It is done if it is still a big jiggly in the center but usually I do not check that because it causes the cheesecake to crack if you open the oven. So just follow the instructions and you should be fine! Make sure to let it chill overnight so it is really good chilled through! Enjoy!

    Good evening, I was wondering how important is it to actually bake it in a water bath? Would it make a huge difference if I didn’t follow that step?

      hi by using a water bath we keep the oven moist and help moderate the heat so that the edges do not cook faster than the middle of the cheesecake. also it prevent cracks :)
