Crabs don't know stuff, they don't know what venom is. They just have an instinct to get away from brilliant-colored sea creatures. But they don't have an instinct to identify venomous land creatures.
But the Scorpion wasn't trying to kill the crab though, he was more concerned about leaving the tank than fighting the crab because he's not used that type environment, and wanted to get out. The crab obviously had the advantage for the entire fight because it was more suitable with It's aquatic nature.
