First Time Cooking A Lamb Roast Dinner

- Today, for the first time in my life, I try cooking a lamb roast! Let's see if I can get it to turn out!
What I used was:
1.6kg leg of lamb
1 head garlic
2 onions
Salt and pepper
Rosemary
2 cups beef stock
1 cup water
Potatoes
Peas
Flour for the gravy
Olive oil
Oven temperature was 160c fan forced (320f)
Cook time was 3 hours covered with foil
Then another 40 mins uncovered (3 hours 40 all up)
Add another hour for a 2.5kg roast
Potatoes were boiled, dried, covered in olive oil and baked for an hour.

Sorry Greg, It looks over cooked. I've cooked lamb on 100F for 4 hours plus with a meat thermometer. It turned out tender and pinkish.

Stab a few holes in the meat, stick cloves of garlic which are covered in olive oil and salt. Use oregano, heaps of salt, pepper and lemon juice.
Greek version. I'm sure it's delicious

This episode should be called "Slapping David Bowie in the face with baked onion"
When I lived in a bed sitter in Lithgow I used to get a couple of lamb shanks & make a baked dinner with them, back then shanks only cost about 20 cents each as they were considered dog food.
That is the dryest looking lamb ever. Even the gravy can't save that.
Looks really nice. I usually cook potato and pumpkin in the meat juice for the final 40min. But I'm sure that taste like heaven. Good stuff Greggo.
Off to the shops tomorrow going to give this this a try. You give me so much confidence. Never cooked a roast but hey why not have a go!

"Lamb"we got in the US was really leg of a young sheep and the meat was indeed huge.My mother roasted it fairly plain and served with English Mint Sauce.I always saved the bone for a pot of Scotch Broth after I cooked it.This is a proper feast though.Lamb was so expensive we only got it at Easter or for my Birthday so it was a special meal.
She be crying out for the Mint Jelly. Great spread Grego, I would need to sell my car to buy a leg-o-lamb here in Taiwan.

Way to go Friend! That was scrumpdiddlyumpshus! With Friar Tuck and his mate, Cow Timer, they supervised one great meal! I have never cooked my potatoes that way, but I can see how it would develop so many flavors during the process. Isn’t it crazy how you can pull aluminum straight out of a hot oven and touch it? This is our Sunday meal routine; however it’s loved so much it’s our Thursday meal and worked in twice this week because pregnancy hunger 😋

Why didn’t you clean up the onion and garlic? That is c%#p……. I NEVER in my life have seen anyone throw the nasty onion and garlic skins in their roasting pan.

why did you not peel the garlic and red onion? that is something i was taught from a child to always do in the USA, i know you're Australian but that seems so foreign to me as an American.

im not a massive lamb fan, but i had lamb shanks recently where it was slow cooked and it just fell off the bone, was so good
I was never a huge fan.... I guess because it wasnt common here in the South. If prepared right it is quite tasty, I would still rather eat almost anything else though.
struth...for a minute there i thought Grego was wearing the leopard print short shorts....didnt realise until he demanded that "leg bit"
Coated the leg with a rub of mustard and thyme and other spices not just on the bottom how are the spices going to reach the lamb. Didn't even seasoning the potatoes with nothing

Yum....looks lush x can't believe you've not cooked lamb before....or did you just mean oven cooking?? I love doing mine in the slow cooker now...sear it off first then put it in slow cooker with fresh mint, thyme, rosemary and garlic....and a couple of fresh oranges and the juice of them....cook in bovril stock with loads of English Mustard....cook til it falls apart...it's delish!! Loved your cooking timers ....and the Bowie plate...that's far too good to use!! Great video Greg x

I only park boil mine for 8mins.
Going to try 20 mins par boil 🤩
Adding a few dashes of bicarb soda onto the surface your potatoes (before you applied the oil to them) and and then rough them up and let them sit for a few min helps to increase the browning and crispiness. The soda breaks down the pectin draws startch to the surface area. (Note: This trick works with other foods as well, such as skinned chicken that you are trying to get extra crispy in the oven.)

Hey Greg here’s a cooking tip put a kitchen towel wet it a little then put it under your cutting board so it won’t move

Grego, u would cream on how soft my lamb was and I did it on charcoal. The video is on my channel
Cook it at about 130c and if you are going to use stock, use chicken stock not beef and don't forget to add some red wine aswell
