I got a doubt here that. the counters we are measuring are the values of the application server statistics we are doing load test or values of the laptop where we are executing load test. because we are no where giving any reference of application under test in Perfmon. After we got the graph.... Lets say there is spike 10am then there is spike at 11.30am... The graph only shows the spikes, How do we know which process has caused those spikes ?

You need to check the instances one by one, look at the average and the max counters.
