It is better not to overlook. Instead you can soak , drain the water and store in fridge overnight

Yes you can keep the batter for a day in the fridge.The Vada has to be consumed the same day itself.

The oil can be reused for making seasoning for sabjis in everyday cooking. It is not good to reuse for heating for deep frying repeatedly
