I asked a waitress (let me note here… she was the sweetest bubbliest human I’d ever met especially at 07:00am!) “what is in the black pudding” (to see if there was wheat or bread crumb). She wasn’t sure and went to the kitchen. She came back out, looked at me with the whitest face, biggest eyes, and a look of fear I will giggle over for the rest of my life. I never got to know the ingredients or the taste as she just simply said… STAY AWAY FROM IT. 😂😂😂
There is a Filipino dish called dinugoan, we also call it chocolate pudding. It's originally intestines and pig's blood cooked with lots of garlic and some vinegar *which what turns the blood black. I learned to make it with just pork instead of intestines, it is actually good, but my kids can't get past the color😂
It’s a delicacy from the UK. Pig blood cooked into a sausage type consistency and served in slices or crumbled onto savoury dishes. Certainly not for the faint hearted!
Morcilla in Spain and other parts of LatAm. How is it made in México? In Spain they make it with rice OR onions in the filling. In C. América, it's more often rice..

No adornment; no casing like black pudding which just looks like a dark sausage in cultures that already consume a variety of sausages. 🤷🏻♀️
