Not to negate what you said, but people purchase capacities greater than 600 purely because of the torque production. I have commuted and traveled on my R6, and there were many times I wish I had more torque.
Unfortunately, the act of making a motorcycle scream is reserved for purists, and purists do not make enough sales for manufacturers, hence the saying; "exceptions don't make the rule". It is the whole reason, combined with ever stringent Euro emmisions that the 600 category is slowly being replaced with the 650-750 class.

The guy on the R7 is clearly a more skilled pilot than the R6 pilot
Now the twin will allow more corner speed and smother power delivery in and out of a corner, however, the R6 should be gaining in the straights.
That is considering two riders of the same skill level.
R6 is arguably the best bike ever made, I really want one.
