I make Mozz sticks like this all the time! A tip if you're having trouble getting your breading to stick: grab your microplane or the smallest holes on your grater and scuff up the surface of the string cheese. Helps stuff stick in there much better, in my experience.
I just double bread mines tbh flour, eggs, breadcrumbs, eggs, breadcrumbs

@@ttakamiorama never really tried air frying tbh Brody. 3-4 coatings may be a little much for me considering I use Italian Breadcrumbs instead of Panko for Mozzarella Sticks.
Edit: then again it depends on the size of your Sticks. If you're cutting them yourself into huge chunks 3 is doable. I've seen videos of this restaurants mozzarella sticks which are the bigger than Crab Sticks
Pro tip: Just blitz the panko in a food processor. You get the ultra crunch of panko with a finer grain of standard bread crumbs. Boom goes the dynamite!

Made em, they were amazing, my kids were super excited to be turning mere cheese sticks into delicious mozzarella sticks. Buy the cheapest thinnest cheese sticks that you can find, the only problem with ours was they were too thick. We skipped the fridge step too, and did one hour in the freezer and they were fine.

I love that you always push people to get higher quality ingredients, like eggs from pasture-raised hens. Just look at that golden color. I know it doesn’t matter in this recipe, but it’s not only better quality but it’s less suffering for the animal. Respect.

To be honest with you. I have a good recipe I came up with. I do fresh mozzarella sliced in rounds. At 320 is where I fry. Comes out delicious. However sometimes the cheese leaks out. I use panko only. I'm going to try the Italian bread crumbs panko combo. Nice job brother. Thanks for the tip.
Why doesn't anyone seem to use peanut oil for frying? It's so delicious! While I know it's more expensive, using toasted peanut oil is a real treat to fry mozzarella sticks. Absolutely phenomenal taste.🌞

I remember when these first became a thing and I tried to make them at home. I remember it actually turned out better flavor wise but I seem to recall it was a bit of a mess. I bet the step I skipped was freezing the sticks. Gonna have to try this again.

Right up to the point of adding them to the fryer. As for minimum time it also depends on how fast they cool down in your freezer, which is heavily influenced by how much is stacked in there. They need to be firm and hold their stick shape when you wiggle them around.

What’s the name of that device that you use to measure the temperature of the canola oil?
how long should put them in the fridge before the second coating ?
It seems like you could push the oil temperature a bit above the target temperature (maybe by 15-20 degrees?) before adding the frozen food so that the temperature never drops below the targeted 350. You'd still need to adjust the heat so that the oil doesn't get too hot after the food is in it.

Instead of fresh mozzarella, try "Scamorzza" or "Mozzarella Fumare" (smoked mozzarella) both are low moisture and whole milk. As an alternative, the "Poly-O" brand of whole milk, low-moisture works nicely. The draw back is thay you have to cut them.

how do you measure parts?
I usually avoid dishes that require deep frying, since I feel like I'm wasting the excess oil in the pan. What's your best tip to either store or re-use the frying oil?
If it's not too dirty, let it completely cool, run through a fine mesh strainer back into the plastic container it came in if you emptied it or a jar. And don't mix your oils, ie. only reuse fish fry oil for more fish, if you're frying dessert, only reuse for more sweets. I store mine back in the pantry with my clean oils.

What brand of food mill do you recommend? I see prices ranging from $20-$150 on Amazon. I'm not opposed to spending money, but if a $20 one does the job, there is no need to waste money.
Do you have to use bread crumbs or panko? Like can you just use flour?
If you don't have breadcrumbs, you could batter them instead of breading them, do them in beer batter or tempura. You definitely want to egg, flour & freeze them first though.
Or just put them in the oil long enough for the batter to set, then freeze them, and either refry, air fry, or bake.
Though if you're going with batter, halloumi is a good option too which is sturdier than Mozzarella.

I’ve never tried deep frying, in part because I didn’t know what to do with all the used oil? Keep it for another cook later (doesn’t it go rancid?) ? Discard it? Seems wasteful, and anyway how to discard it, surely you don’t pour it down the drain where it could form a “fatberg” in the city sewer, or leave it liquid in the trash??
Is there a reason to not just use puréed tomatoes?

Heavy cream, or a slurry of flour and water. If you go with the second method, season the flour before adding your water to make the slurry.
Sadly, am like your wife, but not til after I turned 40ish. Drives me nuts!!! But yeà, sometimes I just bite the bullet and eat things w eggs anyway 😆. Not much, just 2-5 bites, but I miss eggs SO bad! At least I get a good nap in afterwards 😆😆😆😆

Its actually better to immediately fry after breading. If you want to freeze it just freeze the mozzarella before.

Pro tip: Just buy those in the store. Do nuggets, crisp fish, fries, jalapeño poppers etc... But buy your mozzarella sticks from the store. Save money, time, energy and get - if not the perfect -great end result with least amount of work and time.
Was thinking about some finger foods for the game but with the price of everything lately i didnt wanna spend $8 on 5 mozzy sticks from my pizza place. I literally have all the stuff needed in my fridge and pantry. Problem solved!
Why not use Italian seasoned Panko? Whole Foods has that.
Now do it with Västerbottenost. Perhaps mix with Mozzarella.

No.
I'm going to try that with a couple but will spritz them all over with spray olive oil before air frying. If my samples don't work out I'll deep fry the rest.

Bro the bread crumbs didnt stick to the mozzarella stick but my hands😭 when i froze it and cooked it, it ended up being a clump of bread crumbs, oil, and cheese but atleast it tasted good
For low fodmap sauce remove garlic and use garlic oil. Make sure to check your limits of tomatoes people, eat to your comfort. Also gluten free flour for the sticks and if you need it dairy free cheese but mozz is really low in lactose so I suggest you try it.

I will try with mozzarella sticks... but... I like regular mozzarella. So it isn't as dense.
A stick-blender is a quick and easy way to puree the tomatoes if you don't have a mill.
Or just push it through a sieve

The only way I have found is to do it ( carefully ) on your deck. I don’t deep fry in the winter.
Then you throw the mozzarella sticks in the fryer!!
