Thank you for this amazing video. Unfortunately, we can't get access to 95% alcohol in this part of the world. Is there anything else I can use? Perhaps a high-proof vodka, rum, or gin?
@@SoulOnSunday use the highest proof neutral spirit you can find. Depending on the essential oil, some will dissolve more easily in lower proof spirit. If you see it’s not creating a stable solution (meaning it separates) just shake the bottle between usage. Hope this helps Cheers

I feel the same way. If I'm out at a a bar/restaurant I want the bartender to go that extra mile and give me a nice big spring of mint, peel, candied ginger etc. But home cooking and mixology is a different beast, where efficient use of ingredients with 90% of the results wins
I've been using aerosolized essential oil straight with moderate results. I went ahead and ordered some p.glycol and made a batch of "the sauce" and it is a definite improvement! You just made a lot of home cocktail enthusiasts happy 👍
I tried the recipe with orange and lemon. However, the recipe was a bit too much for my 50 ml spray bottles. Therefore, I used the following on my second attempt: 8 ml essential oil 16 ml propylene glycol 24 ml highproof alcohol (96,5%) That worked really well for me. Thank you!
I bartend at a cocktail bar, and I have wanted a safe formula like this for a while! Thankyou! The main reason for me is because I feel like a lot of the oranges where I buy my produce just don't have nice thick oily skins. And when they are thin and don't express the amount of oil I want, I wanted this to make sure my cocktails are still tasting great.
Awesome. I have been using food grade citrus oils (only component is the oil of the citrus) for quite a long time. Many candy maker/supply store have them. Great and easy way to have the zest without the waste and be shelf stable.
Really the savings is possibly more significant for home use....how many times does something get thrown out after making only one or two cocktails. This is a pretty big improvement.
We're gonna' be trying this for sure! Not sure if I'm right about this, but oftentimes I feel I notice that a peel in a drink will intensify and cause the drink to change the longer it is in there. I wonder if this method misses out on that magic or if I'm crazy and that's not a thing 😂😜

I don’t drink Much vodka, but is is a great carrier. I do the same with essential oils, and I use it in my pie crust recipe in place of water. It evaporates and makes it super flakey. Not relevant here, other than to say vodka actually has a few good uses! 😂
Try adding the propylene Glycol to the mix, you will see how big of a difference it makes. The aroma is stronger and last longer, not to mention it also helps to keep the oily voscosity at the surface of the cocktail like a real zest expression
I'm glad you took the essential oil links out of your description. I purchased the ones previously linked and had an awful reaction that sent me to the doctor. I made lemon, orange, and grapefruit versions. Needless to say, the spray bottles now live in the bathroom to be used as toilet spray. If anyone has any brands or websites to purchase safe essential oils from, please comment. I don't know if I read the GRAS list wrong or what, but the listed ingredient was the only ingredient on the oils I had. Kind of scared to try this again...
Hey there, first I’m very confused and sorry about what you experienced. I’m sorry because never I wished to lead anyone into making something potentially dangerous. But I’m also confused because GRAS means generally recognized as safe. This is not about how the essential oil is made rather than what’s the ingredients itself. If it’s gras, it’s gras … period. For example, orange, lemon, mint… these essential oils are gras because they should come from orange, lemon or mint which are all recognized as safe in the real world… so I really don’t understand what could have happened. I will recommend, to reassure you to watch Darcy’s video about how to safely use essential oils. It’s linked in the show notes. Again, I’m sorry for what you have experienced but I really don’t understand what could have happened and it should never have happened if what you bought was GRAS oils. Maybe you should check if you have allergies… Hope you are doing good. Cheers

Your content is great and I'll continue watching and experimenting with you. I'm not sure what went wrong either. The only thing I can think of is the oils. I didn't realize general links go to different storefronts based on your locale and may change the item listed. I even bought graduated cylinders to precisely measure ingredients. I did watch Darcy's video beforehand as well. I just wish at least one brand or provider was given as I'm sure different brands adhere to different standards. Would be interesting to see how well this would work with 60% alcohol. That's the maximum legal amount I can get in Norway. Surely, if it separates a bit, you can just shake it up a bit before use?

Ive been doing this for years minus the propelene glycol. Its great for cookings as well. Definitely going to have to try adding some propelene glycol. I am a bit surprised by how much essential oil you used though. I use significantly less than that.
You can always use less but I feel I need more spray to get to the level or aroma I get with real orange zest. I really recommend you try with the Propylene Glycol. You will get a longer lasting and stronger aroma.

I have a question that was not covered in the video, and I haven't seen it in the comments. It has to do with the storage of the sauce. I'm thinking that it should be refrigerated, but I would like to know for sure. It seems like refrigerating it will make it a bit more solid and not spray as well. If it is to be refrigerated, should you let it warm a bit before using it?

Just made these and they worked out perfectly with your recipe! Thank you :) I did manage to waste half a bottle of essential oil when I tried to open the dripper but I think I still have a good few sprays left.

I make way way fewer stirred cocktails than shaken so I pretty much will never use as many swaths as I need citruses to juice. But I do have a nice old-timey perfume bottle filled with lemon oil just 'cause it's cute and I'm lazy.

Made one mistake making mine. Thought to myself "hey this essential oil stuff is expensive" and used the alcohol to wash out the bottle to get every last drop. That turned out to be a mistake. I think the last bit of oil coating the inside of the bottle is heavier with turpentines and leaves a bit floating at the top. not a huge deal as you just have to shake it a little after each use, but I think you're better off just living with the little bit of product loss.
Hi JF!! I'm looking forward to try this one. I don't know how grass essential oil would be translated to portuguese or spanish but I found a sweet orange cold pressed oil here and I'm wondering if that is the safe one to use. Can you tell if that's the one?
I think saying that it reduces all that waste is misleading unless you know that the factory that made the essential oils used the juice from all the oranges. It just transfers the waste higher up in the economic chain.
Hi Thomas, that’s a good point. That being said, most decent oils companies are buying the scraps from the food industry, so yes we can hope for waste reduction
Hey JF! I’ve just been spraying food grade essential oils on the tops of my cocktails and I like the results. Not sure what’s wrong with that? Propylene glycol is not easy to find in France I don’t think.
You can get away with lower proff spirit. The only thing is the solution will not be stable (it will not stay homogenized) but if you shake your spray bottle everytime before using it, it can work fine

What an amazing timing for this video! Thank you so much for this! I've been using orange bitters in a spray bottle for a while but wasn't satisfied with the results. I stumbled upon Darcy's channel about a month ago and went through his essential oil videos to do what you just did. I've hit a roadblock on the high proof alcohol. The SAQ no longer offers Global 94%. Everclear was never available either... So the only option left would be a local distillery neutral grain spirit at 70% ABV. I'm wondering if it will get the job done as good or if I'll need to make some adjustments. What's your take on it? Also, since watching Darcy's videos, that bottle of Acid Phosphate I've got has been calling me name 😁
With some 70% alcohol you can get away but it won't be stable. Meaning you'll have to shake it a little everytime you will use it but that's not such a big deal. That said, that's for orange EO. With other EO, it won't be as bad because the level of turpene is lower.
@@thomasprasloski6517 The highest proof I managed to find was a locally made 140 proof neutral grain spirit. It works very well but the mixture separates quickly. All I do is shake the bottle before spraying. However, my biggest issue is with the spray bottles. Specifically for the Orange version, I have not yet found a spray bottle that is made well enough to work more than a handful of times before clogging and becoming unusable. Maybe the bottles I got struggle with thicker and oily solutions. Or, perhaps, either the lower proof spirit and/or the sweet orange essential oil brand (Divine Essence) I used are making the solution thicker than it should be. On the flip side, the Lemon version works great with those same bottles 9/10 times. I have not yet tried the bottles JF suggests in the video. I'll have to give those a shot.

At least 6 months, probably longer but orange oils slowly degrade over time no matter how they are stored, up to about a year before they really go off.
I cannot find 95% alcohol in my area, rumor has it 151 can be obtained but haven't seen it and Everclear is the strongest I can find. What tweaks to the recipe would you start with using Everclear? Great videos!
As long as your abv is higher than the Chartreuse, you can easily pull this out. Rather than lowering it to 80% and then using water at the final step, use more alcohol. You will simply have to do your own math with the abv of your alcohol to achieve the same result
I don't think it will. That said, I know it exists in Ontario but I think you need a special license to purchase it. Maybe if you hae a friend working in a bar who knows the owner, you could try to see if you can make someting happen...
I found a company in Saskatchewan recently called Strathcona Spirits that sells and ships a product called Clear Stock that is a 96% grain alcohol and they ship to Ontario. It is a large jug (4L) so I've been looking for other things to use it for myself.
@Kori Sanderson pharmaceutical grade tends to have additives that make it taste bad to discourage people from drinking it. Won't always work out but might be an option
What you think of we are taking your mix and infusing with some orange peel ? It's not gonna be even stronger in orange ? Or take out the essential oils and infuse the alcohol and prophylene glycol with orange peel ?
Orange peel has water in it and because of the high terpene content in orange oil that water may cause it to separate. Orange oil is difficult to work with if you add water to the mix.
60 would be the minimum to dilute some of the oils (orange oils being one of the most difficult to dissolve) but anything lower than 80%, you will have to give a quick shake to your bottle each time you will use it.
I love this idea of using essential oils to reduce waste. How long does the spray last? Do you need to refrigerate? My brain is thinking of the many other oils you could make. love it. cheers
You can get away with it but the solution will not be as stable. Meaning it will probably seperate between usage but with a quick shake just before using it, it should be fine. Hope this helps
The essential oils are not soluble in water so you need a high alcohol content to dissolve them, especially orange essential oils which are even harder to dissolve than the other ones. So Vodka at 40% will not dissolve it unfortunately
Is the orange essential oil you linked in the description GRAS? I'm not seeing it in the Amazon description but perhaps I missed it. The label of the product also says for "External use only." I'm sure you wouldn't link an unsafe essential oil but I just want to make extra sure

Propyleneglycol by itself has a slight sugary taste, but i guess it's not potent enough when put together with the essential oil to really mess with its taste
Ha! I actually ended up with the same shaker & spoon set (birthday gift from my wife) and also thought the orange oil spray was a game-changer. In fact, I had already ordered orange and grapefruit oils and more atomizers before I saw your video, not realizing that I needed to mix it with anything. I'm so glad that you and @artofdrink did the legwork here, I'll be mixing this up later today. I make a few cocktails a week for myself and rarely more than that, so shelf-stable options like this are a big deal. Thanks for the video!
Good to know, but I don't have a lot of citrus waste. If I use an orange slice for garnish, I've probably already zested the rest of the orange for cooking and eaten the fruit as a cook's bonus. I eat lemons, limes, and grapefruits, too, so the only part I throw in the garbage is the pith. I like the idea of a sprayable oil, but it doesn't have to be so complicated. Couldn't you simply dissolve manually acquired or commercially prepared culinary oils in 95% ethanol and call it a day? MCT is great for people who follow a keto lifestyle and PEG is GRAS, so there's no harm in it, but you'd get the same thing by twisting a bunch of lemon peels over a saucer of Everclear. What I want is to find a use for peach skins, because that's the one thing I always throw away.
You will need a whole lot of spent citrus to make your own. Essential citrus oils usually come from the juice industry. They have enought spent citrus to make the oil but to make this at home... That's going to be a lot of effort for very little result
EDIT: Silly me, as I wrote I tested with an empty glass, but over an actual cocktail (in wide glass), it works as described. So please ignore the comment below. Reporting back: I've bought the same essential orange oil and Propyl Glycol, as well as a high-quality 96.5% alcohol (marketed for making liqueurs etc.). On its own, the oil smells amazing! Then I made the juice and sprayed it over an empty glass for testing and... it smells of alcohol and a bit of orange, not what I expected from your description. Maybe the smell will make more sense on top of an actual drink (e.g, Old Fashioned? will try soon)? Does it depend on the kind of glass I use? Do I need to shake this way more than I thought? Thanks for your thoughts on this.
Hi there! First I'm really sorry to hear this didn't turn out as well as you expected. That said, I'm very surprised to hear that you get a lot of alcohol smell and not a lot of citrus aroma. Believe me, I tried the formula wiith many different oils and it was a hit every time. No alcohol smell and PACKED with citrus aroma, even more than with real citrus. In order to help you out, I really want you to be happy with this, the only problem I can see is 1- the essence oil you used was not 100% pure cold pressed GRAS essential oil or 2- there was a mistake in the measurments Feel free to send me a DM on Instgram at @jfdesfosses and send me some pirctures of what the products you used and we'll figure this out. between this, super juice, acid adjustment solutions... there is so much to do to level up your cocktails and "streamline" cocktail making at home

Therefore, I used the following on my second attempt:
8 ml essential oil
16 ml propylene glycol
24 ml highproof alcohol (96,5%)

Have you tried this with anything other than citrus? Mint, for instance? It seems like it should work with just about any food grade essential oil.
Absolutely. This formula can be applied, the same way with any other GRAS essential oil for aromatic mist.

I make way way fewer stirred cocktails than shaken so I pretty much will never use as many swaths as I need citruses to juice. But I do have a nice old-timey perfume bottle filled with lemon oil just 'cause it's cute and I'm lazy.

Use caution with anything other than citrus. The safe upper limits for many essential oils is quite low.

Made one mistake making mine. Thought to myself "hey this essential oil stuff is expensive" and used the alcohol to wash out the bottle to get every last drop. That turned out to be a mistake.
I think the last bit of oil coating the inside of the bottle is heavier with turpentines and leaves a bit floating at the top. not a huge deal as you just have to shake it a little after each use, but I think you're better off just living with the little bit of product loss.
Hi JF!! I'm looking forward to try this one. I don't know how grass essential oil would be translated to portuguese or spanish but I found a sweet orange cold pressed oil here and I'm wondering if that is the safe one to use. Can you tell if that's the one?
I think saying that it reduces all that waste is misleading unless you know that the factory that made the essential oils used the juice from all the oranges. It just transfers the waste higher up in the economic chain.

Hey JF! I’ve just been spraying food grade essential oils on the tops of my cocktails and I like the results. Not sure what’s wrong with that? Propylene glycol is not easy to find in France I don’t think.

You can get away with lower proff spirit. The only thing is the solution will not be stable (it will not stay homogenized) but if you shake your spray bottle everytime before using it, it can work fine

At 76.5%, some oils will not dissolve well but if you shake it every time before spraying it should work ok

I've been using orange bitters in a spray bottle for a while but wasn't satisfied with the results.
I stumbled upon Darcy's channel about a month ago and went through his essential oil videos to do what you just did. I've hit a roadblock on the high proof alcohol.
The SAQ no longer offers Global 94%. Everclear was never available either... So the only option left would be a local distillery neutral grain spirit at 70% ABV. I'm wondering if it will get the job done as good or if I'll need to make some adjustments.
What's your take on it?
Also, since watching Darcy's videos, that bottle of Acid Phosphate I've got has been calling me name 😁
With some 70% alcohol you can get away but it won't be stable. Meaning you'll have to shake it a little everytime you will use it but that's not such a big deal. That said, that's for orange EO. With other EO, it won't be as bad because the level of turpene is lower.

@@thomasprasloski6517 The highest proof I managed to find was a locally made 140 proof neutral grain spirit. It works very well but the mixture separates quickly. All I do is shake the bottle before spraying.
However, my biggest issue is with the spray bottles. Specifically for the Orange version, I have not yet found a spray bottle that is made well enough to work more than a handful of times before clogging and becoming unusable. Maybe the bottles I got struggle with thicker and oily solutions. Or, perhaps, either the lower proof spirit and/or the sweet orange essential oil brand (Divine Essence) I used are making the solution thicker than it should be.
On the flip side, the Lemon version works great with those same bottles 9/10 times.
I have not yet tried the bottles JF suggests in the video. I'll have to give those a shot.

It is shelf stable. You can go ahead and make some without worrying about this.
At least 6 months, probably longer but orange oils slowly degrade over time no matter how they are stored, up to about a year before they really go off.
I cannot find 95% alcohol in my area, rumor has it 151 can be obtained but haven't seen it and Everclear is the strongest I can find. What tweaks to the recipe would you start with using Everclear? Great videos!
As long as your abv is higher than the Chartreuse, you can easily pull this out. Rather than lowering it to 80% and then using water at the final step, use more alcohol. You will simply have to do your own math with the abv of your alcohol to achieve the same result

I don't think it will. That said, I know it exists in Ontario but I think you need a special license to purchase it. Maybe if you hae a friend working in a bar who knows the owner, you could try to see if you can make someting happen...
I found a company in Saskatchewan recently called Strathcona Spirits that sells and ships a product called Clear Stock that is a 96% grain alcohol and they ship to Ontario. It is a large jug (4L) so I've been looking for other things to use it for myself.
Maybe you could get a small amount from your pharmacy. (Where you get your Dr scripts filled)
@Kori Sanderson pharmaceutical grade tends to have additives that make it taste bad to discourage people from drinking it. Won't always work out but might be an option
What you think of we are taking your mix and infusing with some orange peel ? It's not gonna be even stronger in orange ? Or take out the essential oils and infuse the alcohol and prophylene glycol with orange peel ?
Orange peel has water in it and because of the high terpene content in orange oil that water may cause it to separate. Orange oil is difficult to work with if you add water to the mix.

What is the minimum alcohol content that you can use? Finding 95% alcohol in Ontario is a pain, any suggestions would help
60 would be the minimum to dilute some of the oils (orange oils being one of the most difficult to dissolve) but anything lower than 80%, you will have to give a quick shake to your bottle each time you will use it.

The essential oils are not soluble in water so you need a high alcohol content to dissolve them, especially orange essential oils which are even harder to dissolve than the other ones. So Vodka at 40% will not dissolve it unfortunately

Maybe but I’ve been using absinthe in a spritzer bottle and one bottle of ansinthe is going to last a lifetime

Yes the alcohol is just a solvent. You can honestly use just regular vodka the higher proof is going to help with the lingering aroma and shelf life.
Propyleneglycol by itself has a slight sugary taste, but i guess it's not potent enough when put together with the essential oil to really mess with its taste

Ha! I actually ended up with the same shaker & spoon set (birthday gift from my wife) and also thought the orange oil spray was a game-changer. In fact, I had already ordered orange and grapefruit oils and more atomizers before I saw your video, not realizing that I needed to mix it with anything. I'm so glad that you and @artofdrink did the legwork here, I'll be mixing this up later today. I make a few cocktails a week for myself and rarely more than that, so shelf-stable options like this are a big deal. Thanks for the video!
Good to know, but I don't have a lot of citrus waste. If I use an orange slice for garnish, I've probably already zested the rest of the orange for cooking and eaten the fruit as a cook's bonus. I eat lemons, limes, and grapefruits, too, so the only part I throw in the garbage is the pith. I like the idea of a sprayable oil, but it doesn't have to be so complicated. Couldn't you simply dissolve manually acquired or commercially prepared culinary oils in 95% ethanol and call it a day? MCT is great for people who follow a keto lifestyle and PEG is GRAS, so there's no harm in it, but you'd get the same thing by twisting a bunch of lemon peels over a saucer of Everclear. What I want is to find a use for peach skins, because that's the one thing I always throw away.

You will need a whole lot of spent citrus to make your own. Essential citrus oils usually come from the juice industry. They have enought spent citrus to make the oil but to make this at home... That's going to be a lot of effort for very little result

The highproof spirit is the way we dissolve the oil and make it water soluble. Since it is then dissolved, it is stable, meaning it won'T seperate.

Reporting back: I've bought the same essential orange oil and Propyl Glycol, as well as a high-quality 96.5% alcohol (marketed for making liqueurs etc.). On its own, the oil smells amazing! Then I made the juice and sprayed it over an empty glass for testing and... it smells of alcohol and a bit of orange, not what I expected from your description. Maybe the smell will make more sense on top of an actual drink (e.g, Old Fashioned? will try soon)? Does it depend on the kind of glass I use? Do I need to shake this way more than I thought? Thanks for your thoughts on this.
Hi there! First I'm really sorry to hear this didn't turn out as well as you expected. That said, I'm very surprised to hear that you get a lot of alcohol smell and not a lot of citrus aroma. Believe me, I tried the formula wiith many different oils and it was a hit every time. No alcohol smell and PACKED with citrus aroma, even more than with real citrus. In order to help you out, I really want you to be happy with this, the only problem I can see is
1- the essence oil you used was not 100% pure cold pressed GRAS essential oil
or
2- there was a mistake in the measurments
