I agree. I love that they are not sassy and over confident like cocoa butter cooks. They appreciate the other people's cheesecakes with also being honest and not just their own. I also like that they are making it uniquely and also making it good. Plus it's nice to see how they make it with tips so we can make it well and improve. But I can't say that I am surprised because they are chefs and they know how to criticize dishes without being mean and they are more humble soooo...

🍋LIMONCELLO BURNT BASQUE CHEESECAKE🍋
🎂Cheesecake
* 650g cream cheese
* 300g thickened cream
* 170g pure icing sugar
* 4 eggs (200-220g)
* 40g corn starch
* 5g sea salt
* 1 vanilla pod (or 8g vanilla extract is fine too)
* 15-20g zest (around 4 big lemons)
* 40g limoncello
🍋Limoncello Gel
* 30g white sugar
* 3g agar agar
* 40g water
* 110g lemon juice
* 30g limoncello

METHOD for the cheesecake:
- Steps like in the video
- Pour the batter (1.4Kg) into a 20cm/8" tin
- Bake at 250C/480F for 20 min
- Then at 220C/430F for 15-20 min until the top is golden brown
- Leave it in the tin at room temperature for 3 hours then fridge
- Enjoy it when it's cold 🥳

Al the cheesecakes look amazing, but Dan's limoncello cheesecake looks the fanciest! Gosh if I could just have a piece of each one! 😍😍😍😍
I don't even eat cheesecake but wanted to taste it.
Fun fact: if you don't have the time to mix up a cheesecake you can always do a cheats cheesecake. All you need is Vanilla based yogurts and lemon curd and your biscuit crumble of your choice( note this won't be a cheese cheesecake but an imitation, side note passionfruit is a good substitute for lemon curd or halve your lemon curd and add half a passionfruit instead).
Start out with a kilo of yogurt and add about one tenth lemon curd to about a cup of that yogurt mix well in the same way you would a cheesecake, once it's a light fluffy yellow colour slowly fold the mix into the rest of the yogurt. Now taste it, if the flavour isnt to your liking keep slowly mixing Lemon curd into your yogurt until it's to your preferences. Once everything is combined (no white yogurt at all) scoop however much you want into a bowl top off with your biscuit crumble (I recommend trying an oat based crumble with honey and coconut in it but normal biscuit is fine too), then dig in.
If you've made it right it should taste just like cheesecake. You could use gelatin to make a cake version but you may need more yogurt depending on how big you want it. Another small tip, but coconut yogurt works really well as a cheats option for those who can't have dairy.

@@schnozz4301 it actually is. I prefer mine with natural greek yogurt, lemon curd and an oat/honey biscuit crumble on-top. Normally I don't make it in large batches but I've found that when I do, it's normally eating it out of the tub lol. I found it easier to just mix the lemon curd into the yogurt in the tub so it's already pre-made and the 'biscuit' base is delicious. If you use a butter biscuit crumble it works out well too.

Saw the exact recipe ismat is showing/ following posted by an Indian UA-camr 5 weeks ago. In fact it's so similar there is hardly any difference other than a tinyyy bit in the presentation. It's a great coincidence but of course not impossible if two people came up with the exact same recipe and presentation idea within weeks of each other!
