- We challenged resident Bon Appétit supertaster Chris Morocco to recreate Martha Stewart's Baked Alaska in the BA Test Kitchen. The catch? He'll have to identify what he's making with a blindfold over his eyes, letting each of his other senses guide the way. Will Chris be able to reproduce this show-stopping classic dessert without being able to see what it is?

Ngl the cherry ice cream miss is one of the funniest Chris misses we've ever seen. She was suuuper generous with an ingredient score of 75%
that 75% is even more generous considering he added so much to the cake layer lol

It’s very funny watching Chris say, “there’s no way it’s done that way. Why would anyone do it that way?” all while they’re showing the chef do it exactly that way
Honestly I much prefer the two-day videos rather than "Have to do this all in one day". In some of his other videos, you can tell how under the pump he is to complete the second attempt without keeping the crew there overnight.
Yea, I can only imagine that it's too easy to get caught up in your own thoughts when trying to do this in one day - two dayers are a must, especially when they throw some more wild stuff at him. Ironically, not the most wild/complex dish, but one of his biggest misses lol.
So funny that when he found cherries, his first instinct was strawberry ice cream with cherries added, and not just... cherry ice cream. A thing that exists 😆
I love his videos, but he has a bit of that “I’m a classically trained chef” snobbery. “It’s not ice cream, but a dairy dessert!” Get over yourself. 99.99% of your audience says it’s ice cream, but nope, it’s technically a dairy dessert and I think he pointed that out twice.
I think it might be because he thought he tasted maraschino cherry, which is flavored with almond liqueur. Artificial almond and cherry flavor are actually the same chemical compound (benzaldehyde or sometimes acetophenone, they smell alike) , but if it occurs in something a bit tart and red colored you just assume that it's cherry instead of almond.

@@brianhunt8273 it literally technically is a frozen dairy dessert….depending on flavor because of the additives and the usage of ingredients that aren’t typically found in real ice cream it fails to to meet the criteria set by department of agriculture. He’s not wrong and I don’t think that makes him a snob by saying it is ISNT ice cream.

They're waaaaaaay too generous with some of these ratings. To the detriment of Chris, honestly. 58 on attempt one for ingredients? He got like, 3 of 20, and added a huge amount more than existed in the first place. If he knew how far off he was, maybe he'd actually change some things.
Normally even when Chris is way off base I can understand/agree with most of his choices…but I am BAFFLED over the strawberry ice cream and sliced cherries. Just use cherry ice cream, some things aren’t meant to be complicated!

@@Sletchman I'd say pure cherry ice cream isn't super common here in the USA (though there are some like Tillamook's dark cherry), you're more likely to find cherry with chocolate pieces or cherry vanilla. And the amount of cherry flavor in cherry vanillas vary depending on the brand. And like you said, it's pretty easy to DIY a cherry ice cream based on taste. So yeah, the jump to strawberry ice cream is just weird.

The other one the brought him was cherry vanilla and I’ve had it, it’s VERY fake tasting. I think if they had more cherry options for him he would have landed in that, but that’s all he brought them.
EXTREMELY generous on the ingredients score there. Half the ice cream wasn't included. So many ingredients used that weren't in it, so many left out that were supposed to be. No way that was a 75%.
It was literally just a long list of red things lol
Hanna was WAY too generous in both ingredients, technique appearance. Ingredients should have been low 40's, technique 50 at best and appearance 55.
We’re so used to Chris getting robbed. I think the producers are being easy on him now.
Nah we need to keep being real here, he used to be gas a most of these and not second guess himself as much, now he gets so many things wrong cause he’s not always confident

Yeah the scoring on this one feels really weird. Especially for ingredients, where Chris left out the cherry ice cream and did almost a completely different cake
Not going to lie, I think the score should have been painfully lower. Just missed on so many ingredients, appearance, and technique. That said, they are similar in essence and "wow" as was stated. But I think this was a sub 60 score.

How did he get a 68 for ingredients the first time and a 75 the second when he took out several ingredients?!
I feel like with recipes like this, because what Chris would normally make is so much better than what he's trying to replicate, he ends up fighting his own instincts quite a bit.

I think his biggest flaw is that usually about 3/4 of the way into the first attempt, he forgets that he's trying to replicate a thing the way someone else would do it, rather than how he thinks it SHOULD've been done, and then everything goes off the rails.

Sometimes he simplifies things to much, but this time he wildly over complicated it. Cut cherries in strawberry ice cream is crazy, then to omit it entirely the second time. It was a rollercoaster
I think the first scores kind of set him up for failure. They were so close to his that it didn’t really give him the chance to realize he was way off with technique and ingredients. Same with appearance.

Sure the fugde sauce was not in martha's but I like Chris's Idea of adding the fudge sauce on the first attempt.
Chris' overthinking is what always cracks me up about these. Why would anyone add cherries with a strawberry ice cream??? It's just cherry ice cream Chris 😆
Starting out thinking this is gonna be super easy, then reazling how many differnt steps and variations there are in chocolate cake..
I feel like there are quite a few times that the judge says they prefer Chris’ over the original. It would be cool if he and BA came out with a cookbook of all his twists on the originals
I agree. This channel could easily do a print version and an e-version of OG recipe vs Chris's guesstimate. It could be hellafun , especially if it were geared for people who lack confidence in their ability to switch-up ingredients within somewhat finicky creations (That way, it could appeal to persons across a wide range of demographics.)
As most of us know, no singular person's taste buds match anybody else's - even the outward physicality of each our tongue prints are different! (Much like finger-prints and irises - even with maternal multiples!)
So cute how Chris started liking the recipe more when he improved it 😂
I know why he doesn’t shop anymore since the pandemic, but dang that used to be such an entertaining aspect of the videos. A little sad we don’t get to see Chris explore New York anymore :(

I like how they took their time making it look all pretty knowing Chris was going to get his mitts all over it while blind folded.

I've never seen a flourless chocolate cake like this before. The one I'm used to making has a lot more chocolate and it's quite dense since it uses whole eggs. I'm interested to try Martha's version.
Would be awesome to see a guest judge who is the creator of the featured dish Chris is recreating.
They have done this before! I know that Madhur Jeffrey came on and judged when he did her Tikka Masala recipe. I’m not sure if they’ve done it with others too.

The judge felt bad for him so she scored him more generously. The appearance and taste score is much higher than it should be.
I love this series, but I wish Chris would stop trying to Chris-ify the recipes, because the whole point of this is to replicate the original recipe. He intentionally makes changes trying to “improve” on the recipe, then is disappointed when his dish isn’t the same as the original ???
Not to mention the espresso in the cake for bitterness instead of just… a darker chocolate? He thinks too much.

If they'd put a better cherry ice cream in there, I'm sure Chris would have used that. Breyers' frozen dairy dessert has really good cherries in it, but the body is weak. On top of that cold mutes flavors, making it super hard to tell subtle differences.
In the side-by-side they show them using Breyer’s though, so they gave him the actual ingredient used
@@cato3149 Yes actual ingredinet used but doesn't make sense if you haven't seen it yourself. If you ask for ice cream and they bring a frozen dessert you expect it to be a wrong choice and they just brought it because they couldn't find actual cherry ice cream.

there are some vids where Chris is judged too harshly, I think still to this day he has never got a full A before. That said, this video was way to generous.
I've gotta be honest, these are the only videos I look forward to on the channel at the moment, along with the regular ingredient episodes.

Chris usually does great; honestly its amazing what he does sometimes. What he did here was just basked alaska; not anything like the target technically or by ingredient. A C is crazy

I've been obsessing over this series, i didn't know thit existed until now and I LOVE IT ❤ it's so much fun to watch and Chris is awesome
I like Chris and I don't enjoy him being criticized but what's the point of the scoring if it's this ridiculously nice. Like...he missed one type of ice cream, the cake was basically all wrong even the meringue wasn't (ingredients-wise) perfect. And he got at first 58 % and at the end 75 %? Every time I hear "I'm gonna give you..." I roll my eyes. Which is a shame because I really enjoy Chris and the format, it's honestly the only thing that keeps me coming back to BA in the first place.

Ngl most of the time in this series I was usually finding the end scores generous but this was different. There was a lot of missing and wrong ingredients and it looked way different. End scores were way more than it actually was and I was a little bit bothered by it. 🤣

I blended frozen cherries and folded them into vanilla ice cream and refroze it for 30 minutes. The most delicious ice cream ever. There is no straight cherry ice cream out there.(Cherry Garcia?) Not sure why, it's so yummy.
I think only Baskin Robbins. IIRC, it's called Cherry Jubilee.
In Canada you can get Chapman's Black Cherry ice cream, it's quite delicious. A local place to me also does cherry ice cream but obviously that can't count lol.
Tillamook makes cherry ice cream :)
Fosselman's in Southern California has Burgundy Cherry. Rum cherry is a known flavor that you might find in old school drugstores or supermarket branded ice cream.
I felt like the first one was closer but somehow scored lower....

Sorry but this is one of Chris' biggest failures. But admittedly, Baked Alaska is one of my least favorite desserts. Also, Martha's choice of Cherry "Ice Cream" is a product I abhor. IT tastes like Robitussin to me. I wouldn't even allow it into my house. At least Chris' version sounds edible.
