Discovered these special cherries a few years ago and they literally stop the world from spinning while being tasted. So worth the extra money. That being said, Chef, maybe show us how to make them at home to be more affordable, please. Also, would really appreciate storage directives with certain food recipes as I live and eat alone most often. Thank you for making food, cooking and UA-cam more fun for many!

I was starting to think I was the only one who liked crust more than the filling. Now i feel somehow better.
A good pie filling is easy to pull off, but a crust good enough to get compliments for takes skill, and I think it's very much worth developing that skill.
I just have to make a public confession here that after school in the 60s I often made a recipe of Crisco pie crust to roll out and eat. Raw.
The perplexation is why my mother let me. 🤣

Alton Brown's pie episode is really good! It did a great job teaching about how to get certain textures and such, I'm really glad you referenced that! Have you seen his chocolate chip cookie episode? It was great! He tells you how to change the texture and size of your cookie base don slight exchanges of ingredients, and why!
Chef John, I am on the prowl for the cherries in Colorado Springs. But in the meantime I made a fig strawberry filling for one and a peach pear lemon lime for another. Chinese 5 spice went in the peaches beforehand. And the finished results are very, very nice. Thanks, Chef John!
Fyi Trader Joe's has a new item called Pitted Amarena Cherries that are in a deep rich syrup that would probably be perfect for this. They have an intense, super rich and sweet cherry flavor that's way different from what conventional neon red or green Marachino cherries taste like. They look very much like the Luxardo ones and also from Italy but with the bonus of not being $18 and easier to find if you have a TJ's in your area. I'm going to be making this recipe with them, hope it goes well.

I have a friend who loves Old Fashioneds with a Luxardo cherry. I'll make this for dessert next time he comes to visit. We also have a local cherry store here in Northern Colorado so I might add some of those for a higher cherry-to-crust ratio. Thanks, Chef John!

Looks good. I make a quick and all be it much cheaper desert like this. I use apple butter and slices apples in the crust and then sprinkle cinnamon sugar on top. mmmmmmm. I might look for these cherries as a gift to my mother in-law. Thanks for the great recipe ideas.

Love this, but it got me thinking of an even more scrumptious filling for a "pie crust"....beef wellington. I have only had it once and LOVED it. Yeah, I'm more into savoury than sweet, can you tell? lol

We made this. The Luxardo cherries are a little overpowering, although the crust was very nice.
how well do those silicone mats work? also is ther any way to add sugar to the pie crust? i would like a sweeter pie crust for this recipie.
I completely agreed with the whole wheat flour; I make my blueberry muffins with a bit of whole wheat flour and I've never gone back.
