you know a lot! pick up dish to eat can be considered "eat food on your own", which means you are capable to feed yourself. on the opposite, to knock your head down to eat might be considered "beggar's way to eat", "you are a easily head-down person". but thats kinda old tradition stuff, nowadays not many people take it seriously. flash back the memory when I was a kid, how my grandparents taught me about this Chinese table manners.
I'm glad that you commented about picking up one's bowl. They're meant to be picked up -- that's why they're small. You certainly wouldn't pick up a plate and put it to your mouth. There are a number of westerners who keep making up stupid dining etiquette rules for China: according to them, you must not pick up the bowl. Westerners in China also insist that one use a spoon for soup.
Yes, that's another thing that I noted that westerners don't like. I actually saw another white Brit vlogger give his Chinese mother-in-law a look when she spat out bones. The thing is that westerners often don't usually eat their fish with the bones-in. If they have bones in, they remove them before they start eating them. At other times, they remove the bones before they cook the fish. On the other hand, Chinese people eat fish with the heads and bones-in. Some Chinese people like to eat just fish heads too.

Nice!! I too love Sichuan, Hunan and Jiangxi food! All Spicy! Locals always seem surprised I not only can eat it, but LOVE it as well!

Also very common for people to spit out fishbones on to the table, but I still prefer to pick them out of my mouth with chopsticks. 😁
