In my own experience kitchen time is one of the best bonding times one might share. To the pancake question, pancake batter is best cooked when prepared, so, cookem all up. They store and reheat wonderfully, in my experience, not to brag, just the same, lots-o-experience. I remember my brother and I went to Knuckle Reef in October '08 and chartered a helicopter back to Mackay. During that trip we flew over Hamilton Island, which I believe is part of the Whitsundays. Did you get to see this island? Airlie beach was pretty cool too.
Kristina, have you ever looked into growing microgreens on the boat for some fresh veggies during passage? You can grow pea shoots with no grow medium but if you have some coconut core you can grow sunflower shoots, to radish shoots! Extra food that you can grow in a plastic take out container that takes 5-7 days to grow and the left overs you can toss over board for the fish to eat...

So 2 days ago I contracted covid whilst on business in Barcelona, for 7 days my quarantine world is a hotel room away from my home and family but the journey you and John are on has been an amazing find! Thank you so much for sharing , I can’t tell you how much it’s helped..
You can freeze pancake batter. We used to freeze it before going on camping trips. It would slowly defrost while hiking and be ready the next morning to pour and cook.

Chef says, you can definitely use the batter next day for the fresher taste, just put glad wrap directly on top of the batter to stop the oxidization process, itll thicken when cold, so bring out to warm up a little first or thin out with a touch of milk.. If your not picky, easier just to cook the whole batch when first made. 👩🍳

You can absolutely keep the pancake batter in the fridge for a few days with zero problems. We do it all the time since our daughters rise at different times and we don't have the time to mix up a new batch everyday.
Pancake batter is best made the day before and allowed to come together with itself overnight in the fridge - the flour and milk/water will combine more thoroughly and produce a better batter.
The phone device reminds me of 2 yoghurt pots tried together with string used as a comms device!!!! Another fab video and oh, HAPPY NEW YEAR 🥳 and stay safe :-)

Happy New Year guys! I was not expecting a video this week. I figured, you took week off and enjoyed the holidays. Looking forward to the coral reef story. There is a non profit that operates in Hawaii, they do cleanups there at the furthest island. I think last year they picked up 50 tons of both garbage and ghost nets from the island. Pretty depressing.
Happy new year guys. Yet another great episode guys. What a beautiful island that is. Good on you for living your dream. Hopefully you can keep living the dream for weeks, months, years to come. I've always told our kids this. If other people have done it, or are doing it, so can you. . Regarding the pancakes yes you can keep the batter overnight. The best recipe for pancakes is a mug of milk, a mug of flour (pretty much whatever flour you want to use) an egg and a pinch of salt. That's it. Done.
The answer to the refrigerated batter question is to only make as much as you need in the first place. ;-) It's like the question is the glass half full or half empty. Neither, it is twice as large as it needs to be.
Ahh pancakes: it’s best to cook them all and reheat later. The batter will settle and the whipped egg whites will lose the air you are supposed to mix in to make them fluffy. If you want fluffy pancakes, separate the yolk and whites. Whip the whites till they leave 2 little peaks when you remove the mixer. For your batter it’s fairly basic, mix the yolks (2 people you use 2-3 eggs) with a little milk first. You want you wet ingredients fully mixed before adding dry ingredients. Now add a little flower (1 cup) and a teaspoon of baking soda. From here you can slowly add a little more flowers till it looks like cake batter. It should not flow like water. For extra flavor you can add cinnamon and/or vanilla extract. Now gently fold in the whipped egg whites. There should not be very much liquid egg whites in the bottom of the bowl. If there is, try to keep it in the bowl and whip them to peaks again. Important note, rinse the beaters clean before whipping the whites. Once you are done gently folding the whites into the batter, you are ready to make your pancakes. It is also a great waffle batter.

My preference is plain flour crepes cooked in butter, burrito style. Best pancake batter is made the day before so the gluten can soak, can work for some self raising agents/flour as well. I try to make the batter 3 hours before cooking minimum for nicer result. I believe baking soda is not so good, but baking powder is ok, don’t use it for pancakes so... ? Then cook all batter into pancakes in one cooking. Crepes are more versatile and can have many other uses. You can slice the extra day old pancakes [if they last that long] into noodles for use in a good soup stock, or just make up a broth from stock cubes with some vegetables and reheat sliced up pancakes in the soup as per Japanese style. Super fluffy pancakes using same crepe batter by separating the whites and beating them then fold into batter, great if you have no self raising flour or don't like the bitter taste of the self raising flour. One cup flour to one egg and extra eggs for the egg whites. Typically I would do batter and beat some whites and use about 1/3 to make fluffy pancakes and the rest as crepes. The beaten whites are folded in just before cooking starts. So everything can be prepared many hours in advance.

The baking powder is likely not to work as well next day as the chemical reaction that makes bubbles will be reduced. To make fluffy pancakes separate whites from yolks and beat them into stiff fluff. Add to the rest of the batter as a last ingredient (after mixing earlier ingredients). You are welcome!
Regarding the pancake batter - we've kept sourdough pancake starter (basically pancake batter with active yeast) going for 30 years in the fridge and then we lost power for 10 days (not good). With eggs - always crack into a side bowl - much easier to throw out one egg gone bad, than the whole batter mix. (The Voice of Experience) - Making a 4 egg omelete, crumbled bacon, fried mushrooms and carmelized onion, sprinkling of green peppers, and adding the eggs --- and the last one is bad - toss and out of bacon, that was the last bit of onion, dang - out of peppers also. Want a bagel??
Most plastic waste isn't dumped on beaches by beachgoers- it comes from city streets washing down plastics through the city's stormwater drains to the sea where the plastic floats away until it reaches its destination.
Absolutely 100%... especially as there are just 2 residents on this island. The few boaties who visit are usually environmentally conscious and if anything, take rubbish with them.. the plastic we saw seemed like rubbish that had floated here from cities.. and the further north we went up the Great Barrier Reef.... oh my goodness... we noticed more rubbish coming from Asia washing up on the beaches. It was absolutely gut wrenching... I’ll show you the footage once we head further north. You wouldn’t expect this on the reef... 😭😭

Did you say the word "sundowners"? When I was a kid there was a boy scout jamboree next door at Moraine State Park (1973?) in western Pennsylvania (USA). I met people from Australia and ever since have been fascinated by the place. I watched the movie "Sundowners" with Robert Mitchel and Deborah Kerr. He herded sheep and lived where the sun went down. Its one of my favorite movies. 1. Is "sundowner" a common word down under? 2. Have you seen the movie?, also is it popular down under? Great video. btw I love that free range sailing couple.
Spent many weeks at the Percy's. Left a pic of my boat in the 'A' frame. Pity it became the centre of a legal dispute 20 years ago and put the place in a spin. Was a sailing club out of there. PISSY. Percy Island Social Sailing Yachties. We tried to get members to assist and rid the island of rubbish. Unfortunately the island dispute over ownership of the lease got in the way. My photo is actually taken on my last sail back to Mackay from the Percy's around 2002. Great place to chill for a few weeks.
Whether an egg sinks has to do with the size of the air sac. The egg dehydrates over time and the sac gets bigger leading to it floating. It is only a rough estimate of age, not whether it is safe. Though newer is less likely to be unsafe. If the egg is stored in a moist environment it will dehydrate less, so could be quite old and still sink.

There is a non profit that operates in Hawaii, they do cleanups there at the furthest island. I think last year they picked up 50 tons of both garbage and ghost nets from the island. Pretty depressing.

Regarding the pancakes yes you can keep the batter overnight. The best recipe for pancakes is a mug of milk, a mug of flour (pretty much whatever flour you want to use) an egg and a pinch of salt. That's it. Done.
I cook a batch of pancakes. Freeze half, fridge half and then heat in toaster or wicrowave each morning. Saves heating oven and faster.
Cook all the batter and then freeze the extras. Works for us!

The answer to the refrigerated batter question is to only make as much as you need in the first place. ;-)
It's like the question is the glass half full or half empty. Neither, it is twice as large as it needs to be.
Ahh pancakes: it’s best to cook them all and reheat later. The batter will settle and the whipped egg whites will lose the air you are supposed to mix in to make them fluffy.
If you want fluffy pancakes, separate the yolk and whites. Whip the whites till they leave 2 little peaks when you remove the mixer.
For your batter it’s fairly basic, mix the yolks (2 people you use 2-3 eggs) with a little milk first. You want you wet ingredients fully mixed before adding dry ingredients. Now add a little flower (1 cup) and a teaspoon of baking soda. From here you can slowly add a little more flowers till it looks like cake batter. It should not flow like water.
For extra flavor you can add cinnamon and/or vanilla extract.
Now gently fold in the whipped egg whites. There should not be very much liquid egg whites in the bottom of the bowl. If there is, try to keep it in the bowl and whip them to peaks again. Important note, rinse the beaters clean before whipping the whites.
Once you are done gently folding the whites into the batter, you are ready to make your pancakes. It is also a great waffle batter.

My preference is plain flour crepes cooked in butter, burrito style. Best pancake batter is made the day before so the gluten can soak, can work for some self raising agents/flour as well. I try to make the batter 3 hours before cooking minimum for nicer result. I believe baking soda is not so good, but baking powder is ok, don’t use it for pancakes so... ? Then cook all batter into pancakes in one cooking. Crepes are more versatile and can have many other uses. You can slice the extra day old pancakes [if they last that long] into noodles for use in a good soup stock, or just make up a broth from stock cubes with some vegetables and reheat sliced up pancakes in the soup as per Japanese style. Super fluffy pancakes using same crepe batter by separating the whites and beating them then fold into batter, great if you have no self raising flour or don't like the bitter taste of the self raising flour. One cup flour to one egg and extra eggs for the egg whites. Typically I would do batter and beat some whites and use about 1/3 to make fluffy pancakes and the rest as crepes. The beaten whites are folded in just before cooking starts. So everything can be prepared many hours in advance.
The batter keeps great in fridge for a few days. use cling-film on top. way better than cold stale pancakes :)

The baking powder is likely not to work as well next day as the chemical reaction that makes bubbles will be reduced. To make fluffy pancakes separate whites from yolks and beat them into stiff fluff. Add to the rest of the batter as a last ingredient (after mixing earlier ingredients). You are welcome!
Re: pancake batter. It’s best to mix all the dry ingredients together in a jar. Then just add your wet ingredients to make a batch. Aloha

Regarding the pancake batter - we've kept sourdough pancake starter (basically pancake batter with active yeast) going for 30 years in the fridge and then we lost power for 10 days (not good).
With eggs - always crack into a side bowl - much easier to throw out one egg gone bad, than the whole batter mix. (The Voice of Experience) - Making a 4 egg omelete, crumbled bacon, fried mushrooms and carmelized onion, sprinkling of green peppers, and adding the eggs --- and the last one is bad - toss and out of bacon, that was the last bit of onion, dang - out of peppers also. Want a bagel??
Store it in the fridge without a problem. Or make smaller batches daily because it's such an easy recipe.
It is ok to keep the batter in the fridge up to two days
Most plastic waste isn't dumped on beaches by beachgoers- it comes from city streets washing down plastics through the city's stormwater drains to the sea where the plastic floats away until it reaches its destination.
Absolutely 100%... especially as there are just 2 residents on this island. The few boaties who visit are usually environmentally conscious and if anything, take rubbish with them.. the plastic we saw seemed like rubbish that had floated here from cities.. and the further north we went up the Great Barrier Reef.... oh my goodness... we noticed more rubbish coming from Asia washing up on the beaches. It was absolutely gut wrenching... I’ll show you the footage once we head further north. You wouldn’t expect this on the reef... 😭😭

When I was a kid there was a boy scout jamboree next door at Moraine State Park (1973?) in western Pennsylvania (USA). I met people from Australia and ever since have been fascinated by the place.
I watched the movie "Sundowners" with Robert Mitchel and Deborah Kerr. He herded sheep and lived where the sun went down. Its one of my favorite movies.

Spent many weeks at the Percy's. Left a pic of my boat in the 'A' frame. Pity it became the centre of a legal dispute 20 years ago and put the place in a spin. Was a sailing club out of there. PISSY. Percy Island Social Sailing Yachties. We tried to get members to assist and rid the island of rubbish. Unfortunately the island dispute over ownership of the lease got in the way. My photo is actually taken on my last sail back to Mackay from the Percy's around 2002. Great place to chill for a few weeks.
Whether an egg sinks has to do with the size of the air sac. The egg dehydrates over time and the sac gets bigger leading to it floating. It is only a rough estimate of age, not whether it is safe. Though newer is less likely to be unsafe. If the egg is stored in a moist environment it will dehydrate less, so could be quite old and still sink.
