- Cherry Pudding Cake is a wonderful desert if you have some canned cherries on hand. Layer cake with fruit filling is relatively easy and quick to make, it's great for Christmas, holidays or any special occasion.
My cherry pudding cake is based on a vanilla sponge cake. My recipe for sponge cake is very easy, no need for separating the egg yolks from the whites. It works out everytime.
The first layer in cherry pudding cake is fruty filling made with cherry juice - if your juice is really sweet, you can mix it with some water, to taste.
Make sure your butter and pudding are at the same room temperature. You can find, that placing the buttercream is quite hard to do - to be honest, it would be much easier to pipe it on fruits, using a piping bag.
Our Polish Cherry Pudding Cake is decorated with crumbles of sponge cake and some toasted coconut. Make sure to chill it well in the fridge, it has to set completely before serving. How to make Polish Layer Cake with Fruit Filling?
Cherry Pudding Cake Recipe, ingredients:
for the sponge cake,
4 eggs,
2/3 cup of sugar,
1 cup of flour,
1 1/2 tsp of baking powder
few tbsp of lemon juice mixed with water for soaking the sponge cake
for the fruit layer:
1 cup of canned cherries,
900 ml of cherry juicem
3/4 tbsp of cornstarch or potato starch,
2 packages of vanilla pudding mix (40g each)
for the buttercream:
3 packages of instant vanilla pudding mix (40 g each, each one requires 500 ml of liquid),
3 cups of milk,
200 g of room temperature butter,
5 tbsp of powdered sugar
approx. 1 cup of coconut flakes, unsweetened
Cherry Pudding Cake Recipe, method:
Prepare the sponge cake (you can do this the day before): beat the eggs with sugar for about 7-10 minutes or until light and fluffy. Mix flour and baking powder Sprinkle the dry ingredietns all over the egg mixture and gently fold them in. Pour over the baking pan (25x35cm - line only the bottom with baking paper, do not grease the sides). Bake for about 20 minutes in 180C. Let cool completely. Cut of the tiny bit of top of the cake and set aside. Soak the sponge cake with some lemon juice and water mixture.
Prepare the fruit filling: simmer a part of cherry juice in a pot. Mix starch and vanilla pudding mix with remaining cherry juice and add it into the hot juice. Cook, mixing, until thick.
Place cherries on your soaked sponge cake. Pour over hot cherry mixture. Set aside, until sets.
Prepare the buttercream: prepare the pudding, using 3 cups of milk and set aside, until reaches a room temperature (just like butter). Beat the butter with sugar for few minutes and gradually add room temperature pudding - should be very thick (add 2-3 tbsp of pudding on each addition). Place the buttercream on the cherry filling. It's best to place small portions of the buttercream and gently smear it out with a teaspoon or a tablespoon - to be honest, it's much easier, using a piping bag!
Toast your coconut on a dry skillet. Crumble the top of the sponge cake on the buttercream. Sprinkle with coconut. Refrigerate for few hours.
