- Polish plum cake is a wonderful and easy plum and pudding shortcake. It's the beast recipe for dessert, when plums are in season. You can do this by hand, no mixer required!
Polish plum cake is perfect for beginners. You can prepare the crust the day before and keep it in the fridge. Well chilled crust has the best texture. You can also prepare the pastry in advance and freeze it. If you're in a hurry, prepare the crust and place it in the freezer for 5 to 10 minutes - this trick saves you a lot of time! Shorcrust can be made in a food processor, too.
You can prepare Polish plum cake with vanilla or chocolate pudding. Make sure to cook it, until really thick (see the video).
Try to bake Polish shortcake with other fruits - it tastes great with apples, pears, peaches (you can also use canned) or a mix of those.
Plum and pudding shortcake dissapears so quickly from the table. Make sure to let it cool completely, before serving (warm will fall apart, it has to set). Definitely try the recipe, enjoy:)

How to make cake with plums?
Polish Plum Cake Recipe, ingredients:
500-600 g of plums,
450 g of flour,
250 g of cold butter (diced),
1 cup of powdered sugar (cup =250ml),
1 egg,
2 egg yolks,
2 Tbsp of sour cream or greek yoghurt,
1 tsp of baking powder,
few Tbsp of breadcrumbs,
750 ml of milk,
4 tbsp of sugar,
2 packages of vanila pudding mix (40 g each, each one requires 500 ml of milk)
Polish Plum Cake Recipe, method:
Prepare the crust: mix the flour, sugar and baking powder. Add the butter and rub in with your fingers (the butter should form very small crumbs). Add the egg, 2 egg yolks and sour cream. Divide the crust in half, place on part on the bottom of your baking tray (26 cm spring form pan or 24x24 square pan - you can also use slightly bigger one) and cover another part with plastic wrap. Chill both parts of the crust in the fridge for an hour or overnight (you can also place the crust in the freezer for few minutes Prick the crust in a pan with a fork and sprinkle some breadcrumbs to prevent it from soaking. Add chopped, deseeded plums.
Prepare the pudding according to package instructions, but using just 750 ml of milk and 4 tbsp of sugar. Pour the hot pudding over the plums.
Crumble the remaining pastry into big lumps and place them on top of the pudding. Bake for 45 minutes in 200 C (cover with some baking paper, if browns too quickly on top). Let cool completely. Optionally, dust with powdered sugar. Enjoy:)
