MOMMA'S RED BEANS AND RICE WITH BUTTERMILK CORNBREAD

  • Mommas Red Beans and Rice with Buttermilk Cornbread
    2 teaspoons Olive Oil
    1 large Yellow or White Onion, chopped
    1 Green Bell Pepper, chopped
    4 cloves Garlic, finely minced
    2 pounds ground beef
    1.5 pounds Hickory Smoked Sausage (I use Downhome brand made in Stonewall, La )
    1/4 teaspoon Salt
    Fresh Ground Pepper to your taste
    (2) 6-ounce can TOMATO PASTE (I used basil, garlic and oregano flavored)
    1/2 teaspoon dried Thyme
    1/2 teaspoon Onion Powder
    1/2 teaspoon Garlic Powder
    1/4 teaspoon Cayenne Pepper
    (6) 16-ounce cans Pinto Beans
    14.5-ounce can Beef Broth
    plus a can of water
    In a large Dutch oven or pot add olive oil on medium low heat. Add onion, bell pepper and garlic and sauté for 3 to 5 minutes to soften the veggies. In a separate pan cook the sausage rounds until caramelized. Take up and set aside. Add the ground beef to the pot of softened veggies and brown. Season with salt and pepper. Spoon out any grease. (I use lean meat so I don't have to drain) Add Tomato paste and sir for a minute to deepen the flavor. Add the thyme, garlic powder, onion powder and Cayenne and stir in to mix. Add the pinto beans with the juice, the sausage, beef broth and water. Stir and cover. Cook on low for 20 minutes stirring occasionally to make sure it doesn't burn. Serve and enjoy over Rice with a warm piece of buttered cornbread.
    RICE:
    3 cups Water
    1 pat Butter
    sprinkle of Salt
    1-1/2 cups Long Grain Rice or your favorite
    Bring water, butter and salt to a boil in a saucepan. Stir in the rice and cover. Turn down on Really low for 20 minutes. Don't peek and let the steam cook the rice. Fluff with a fork and serve.
    BUTTERMILK CORNBREAD
    2 cups Yellow cornmeal
    1 cup all purpose flour
    2 teaspoons Salt
    1 teaspoon Baking Soda
    2 tablespoons Baking Powder
    2 cups Buttermilk
    1 cup whole milk
    2 eggs
    1/4 cup Vegetable Shortening or Oil
    1 tablespoon Bacon Grease optional)
    Melt the shortening and bacon grease in a #10 inch cast iron skillet. Mix the ingredients well with a whisk. Mix the liquid ingredients together including the melted shortening. Leave a little in the skillet and heat either on the stove top or in the oven. Pour the liquid ingredients into the dry ingredients. Stir to incorporate but do not overmix. Pour into a prepared iron skillet with a bit of the shortening left. Bake at 425 degrees F for 30 to 40 minutes until the middle is done. Let cool a few minutes and turn out onto a cooling rack or a plate and enjoy with butter. Great with many soups, peas, beans, greens or crumbled into a bowl of milk.

    Amy, My mama passed away in 2015...and I was with her constantly especially toward the end I lived with her. But I was sitting right beside her when she had her stroke but had been looking at my computer at some silly tv show. To this day I have guilt over that. Because she was trying to look at me and get my attention but couldnt talk. I know thats crazy ....I took care of her like a baby. And did everything I could think of to make her life a little better. But that last 5 minutes I was watching a stupid sitcom. I say all this because....right now you are stressing on this video and trying to make whiners happy. They don't matter. Those of us who truly LOVE you are not going anywhere. Every moment is precious right now. Give yourself grace. I love you sis.

      Jo Jo you made me cry! But they were happy tears. I feel your compassion. I truly do. You were there with your Mother and had her living with you girl. You need to give yourself grace too girlie! You have made my day my week!! I love you too bunches. You are always so sweet to me. I hang on to sweet souls like you and I give those others to God.     omg ! i made this for dinner yesterday and i served it w/rice for me ...and egg noodles for hubby since he doesnt like rice ... this was fantastic ! so delicious ! will be a staple dinner at our house hold .... just loved it ....i didnt have polish sausage but i did have a pkg of cocktail weenies so i cut them into 3rds...and it worked well...

    I grew up my Mama making Beans and rice every Monday. It was often the meal that fed us for a whole week. Sometimes we had meat or a side of fried potatoes with it but often it was just the beans and rice. I still love Monday red beans and rice. Thank you for this lovely video sweet lady.

    In a pyrex 6 cup, glass, you can make the best rice. In your microwave, 15 min. salt and butter, perfect rice.

    Amy, I just made your Momma's Red Beans and Rice. OH BOY, it is DELICIOUS!!! I used a good amount of oregano and thyme. I put in fresh garlic too!!! Along with the garlic and onion powder as I went along, salt, pepper, etc. This recipe is truly scrumptious. I even made some cornbread to have with it. I did all that this morning and I'm patiently waiting 😜for dinnertime to come around!!! Can't wait! Thank you so much!     I make red beans just like you do., but no ground beef, just a big ham bone I have frozen, I do use the smoked sausage! so good! I am going to try this recipe. I love your recipes and try them all. Thanks for sharing. Love your show.

    Made these on Saturday for supper/dinner and they were so good. Having leftovers tonight. I was going to make my Mom's Mexican cornbread, but didn't get around to it. My energy fizzled out - lol. Thanks for sharing Amy and keep telling those awesome stories! :)

    Amy, you said pinto beans. Is it pintos or red beans? Just wanted to make sure. Either would be delicious! I brown my sausage too. I think it gives it flavor and ,like you say, get rid of that extra grease.
    I think steel magnolias is one of the best movies ever made! I often think of it when watching your videos.
    My mama would make a pot of red beans n rice every Monday. Thst was her washin n cleaning day. Of course, everyday was her cleaning day! Lol i swaney! She cleaned every single day!

      Forgot to say, my daddy put a dallop of mayonnaise on top of his red beans n rice if we didn’t have potato salad or something. Sure did!
      Rice n beans is a great super food! I like all rice, but realy love brown rice and wild rice.

      I had to get to the hospital because my mother is on hospice with Alzheimers. I do hope if you are ever in such distress that someone is more kind to you than you are to me.

      Pamela, maybe you should consider offering a heartfelt apology here. Your comment was harsh at best. But considering what Amy is going through with her Mom (not to mention all the other things she does on a daily basis with a farm, a business, being a mom and a grandmother) she didn’t have to even post a video. But I personally am so glad for every video she shares. I learned as a wee child something that might be helpful to you… it’s from a wonderful movie called Bambi… if you can’t say anything nice, well just don’t say anything at all.
