Easy Homemade Dressing For Thanksgiving

  • Basic Recipe:
    Home Made Biscuits • Buttermilk Biscuits
    Equal amounts of biscuits and cornbread
    32 ounces chicken or turkey broth ( add more for wet dressing)
    1/2 cup butter (one stick)
    heaping cup of onion, sauteed
    heaping cup of celery, sauteed
    2 teaspoons poultry spices
    Three variations of the basic dressing:
    1. add cooked turkey neck meat, liver, heart and gizzard chopped
    very fine
    2. add cooked pork sausage
    3. add chopped apple, soaked raisins and chopped pecans
    You could add all of the three above variations together and have a super rich dressing. I have made dressing this way in the past and it was delicious.
    Bake at 350 degrees for about an hour

    Even though Miss Phyllis is gone we are so lucky to be able to use these wonderful recipes. When Ladies like Miss Phyllis leave this world their recipes and cooking secrets go with them alot of times and are not passed on , so we are truly blessed by her & her family for letting us use these wonderful recipes, thank you 😊

    I don’t know how someone can miss someone they have never met IRL, but I do miss Mrs. Phyllis! Thanks for keeping her channel and memory alive. One day I will get to meet her! I remember when I first started watching her channel..... I kept thinking it was someone else’s channel that I didn’t care for at all and would click off quickly. But I kept clicking on this channel and then realized they were two different people after a while. I bought a KIA a few months ago and I remembered her video when Mr. Bucky had bought the KIA and she was a little upset about not having the towncar anymore but she grew to really love the KIA.

    I'm from the north, so it's bread/sage stuffing for me. We also "stuff" the turkey cavity with our stuffing and let the turkey juices baste the bread mixture as the bird bakes. Yum. I haven't gotten used to the cornbread type yet. It's fun to compare various regions' cooking traditions. Some of the New Englanders like oysters and clams in their dressing, flavored with cranberries and nuts. Like I said, different regions have different tastes/flavors. Isn't it great to have so many selections to choose from?

      Yes! I like them all! I had thanksgiving at my house when I lived in Louisiana, and they were all flabbergasted by my bread dressing. They had only ever had cornbread dressing! I like this idea of using cornbread and biscuits! I’ll be trying that next thanksgiving!

      I think poultry seasoning has sage in it.
      But yeah sage is a must it's basically the main flavor!

      Make mine from old family R, use Sage all so but no Corn Bread just dry bread. My parents were born 1900 and their families made with no Corn Bread. So that would make it 1800. It is good.

      I use eggs and sage lots of sage...sometimes maybe a cream of chicken soup....sometimes I add shredded chicken to ma(e an awesome 1p@n meal😁

    I use my made day before scratch cornbread and a few slices of toasted bread, add egg whites, celery, onions,sage and chicken broth. Miss you and Mr Bucky Phyllis. Happy Stephen is keeping your site up.

    I love how you freeze everything. I use to do that until my husband move my deep freezer. We moved a year ago and my freezer is now in my laundry room. I had been using it for frozen things I had purchased. Watching your videos I have started fixings extra so I could freeze for a quick meal and really variety. Doing that actually offers more variety. You are making a difference in my life. Thank you!! 🌻🌻🌻

    Scrolling thru your videos and came across your Dressing. I make it the same way except I also add a can of cream of chicken soup and a very little amount of sage. Delicious no fail recipe. I don't add eggs either. They tend to turn out rubbery after you freeze dressing. Thanks for your recipe.

    The way that cornbread just slides so easily out of that pan 😋 ❤ that simple stuffing looks so yummy a great base for apples raisins sausage n whatever you want to "dress it up with" ooo you just said sausage! Lol im watching as i comment..yes love the organ meats..omygoodness yes apples n raisin! My fave delish..mmm thk u 💓 💖

    I have worked so hard today, mowing grass and weedeating and cleaning the grass from the curb and driveway, loads of laundry, installing a dryer vent because a bird had gotten in the vent and built a nest. I had to clean all of that out, install a new vent hose, the new vent itself, and a new dryer where my dryer had started to burn !! Thank God, I am not one of these people who throw laundry into the dryer and take a nap or leave the house. Anyway, my reward for all of this is to go back and rewatch some of your videos. So glad I did because I had totally forgotten about the dressing with the apples, raisins and pecan pieces. I will make a baked chicken Monday night with your recipe for that particular dressing.....hard work does pay off !!

    My grandmother made great dressing at Thanksgiving. She'd make two kinds. One like yours and one with oysters. She was from South Carolina too.

      My MIL always made regular and oyster dressing. Most preferred the regular but I never could tell the difference. They were both so delicious.

    I make my dressing like this but also add a stack of saltines crumbled instead of the biscuits, 2 beaten eggs, 2 heaping cups of shredded chicken, 2 tsp sage, 1 tsp fresh ground black pepper. love my some dressing. thank you for this video.

    looking Good, I add turkey neck meat to my stuffing along with onions, celery and some seasonings and bake my dressing with the juices from boiling my turkey necks. That dressing is a quick fix, thanks for sharing!

      ColoradoLady72 Please do not use turkey neck meat or any part of the turkey neck as that is where they inject all the hormones into the young turkeys. Discard the neck.

    I'm catching this on a very hot Southern day in middle of summer and it still makes me hungry for Thanksgiving food. This is the way I do mine too, Mrs. Phyllis--I add fried crumbled sausage and eggs. Love, love your channel. Thanks for your hard work to share with us!

    Looks delicious. I like cornbread, Pepperidge Farm Herb Stuffing, Jimmy Dean sage sausage, celery, onion, garlic powder, sage, one stick of real butter and 1 can of cream of mushroom soup. I use the stock from my turkey or use water and mix Knorr chicken bouillon powder.💜

    I love her & her "down home" easy style of teaching even the most basic of recipes... reminds me of my favorite great-aunt. Yes, she too was a lovely southern lady like Miss Phyllis. All of my favorite summer, kitchen, cooking & learning memories have her in them. I spent some of the best summer's of my life in her home. I always admired & loved her dearly and will miss her & her advise & wisdom till I see again on the shores of Heaven. There was never any one more influential in my life & walk with the Lord than my Aunt Mae. She went on to be with the Lord in 1974. When she was found she was still kneeling my her bed in prayer. What a wonderful testimony her life and death had been. I'd always hoped I'd touched at least one of nieces or nephews in such a way. Then last Christmas my oldest niece shared with me how her life & walk with the Lord has been so strengthened by my influence & how the witness of my everyday life had touched her in the same way. It will ALWAYS be the greatest Christmas gift of my life. Thank you Erica and thank you Lord for the privilege of being blessed far beyond ANYWAY I ever dreamed possible!

    I simmer the neck & giblets for the base of my gravy added to turkey drippings for full flavor. When cooled, the doggies get the giblets cut-up for their Thanksgiving treat. We add an egg to bind the stuffing. Also, dried cranberries or canned mushrooms rinsed & drained added are yummy!! This a great quick gravy if your don't have drippings.

    So yummy. I save all my leftover breads and freeze them and come thanksgiving I have plenty of bread for my dressing. I worked very hard to make it like my Grandmother's dressing. She never shared her recipe but mine is mighty close

    I usually add hard boiled eggs to the dressing but also a egg when mixing the dressing up, also instead of sausage and lot of folks don’t care for oysters.... I usually make half oyster the other half regular dressing, my husband and son in law love it that way. Thank you for sharing your recipes with us Phyllis.

    I make mine with biscuits and corn bread too, but when I make them i use is bacon grease for the fat. It really has a great flavor. I boil a chicken and put some seasonings in the water and that is what I use for the liquid in my dressing, I use a lot of sage, and black pepper.
    We also like the dressing wet as well. I de-bone the chicken and put the chunks in the dressing and then cook it....my Mother made chicken and dressing once a month as a casserole. I also don't like the dressing with turkey and it's drippings. and i don't like gravy on the dressing.

    I HAVE NEVER MADE THE CORNBREAD STUFFING BUT I AM GOING TO GIVE IT A GO. I HAVE TASTED THE SOUTHERN CORNBREAD STUFFING AND LOVED IT. I WILL MAKE TWO SEPARATE BATCHES. MY FAVORITE STUFFING IS WITH OYSTERS. MAKES MY KNEES WEAK JUST TO THINK ABOUT IT. LOVE OYSTERS. THANK YOU PHYLLIS.

    I remember my mom putting a beaten egg and Sage in hers. Most of the time she would make a pan of cornbread and use either a bag of Pepperidge Farm herb stuffing mix or toast some real crispy toast. I've also seen her put some cream of chicken or mushroom Soup in it. She would cook and use the Turkey giblets and put it in the gravy.

    Mizz Phyllis, so glad I stumbled onto your channel a couple of weeks ago. I'm a southern girl raised on all this great kind of cooking. It's getting harder to find people who even know about this food and way of cooking. Everyone thinks Paula Deen is the voice of southern cooking, but not really. Authentic southern cooking is healthy and good for you, not all rich like hers. Your videos bring back so many happy memories of my mom and grandma's recipes (that I still love!).

    This all looks delicious!!!! My dressing is very similar.... Except I use crumbled corn bread, dried loaf bread crumbs, raw eggs, tiny diced unpeeled apples, raw celery and onions, melted butter, chicken stock, canned cream of chicken soup, dried parsley and a lot of rubbed sage! We love it moist also so I'm carful to not over bake. But I do love your style Phyllis!!

    My mom always heated the broth, therefore so do I. We’re originally from north central IA so white bread was used as well as a couple eggs. Just made some last week with baked chicken. Love your video’s.

    This is almost just like my mother's Southern dressing. The only difference is she adds a whipped raw egg to give it a little more cake-like structure, but otherwise, the same. We use a lot of broth, too, so it'll be moist. One year I had some leftover grits, didn't have enough breading and needed some more substance, so I threw that in too. Mom said that was the best batch I'd ever made.

    Thanks for sharing, Ms. Phyllis. We always put sage in our dressing and chicken. Love the idea of the apples, raisins, and pecans. Sounds delish. I always bring the cranberry sauce to our family gatherings, and I use the whole berry cranberry sauce and add pecan chips.

    I am prepping our dressing today. I cook the onion and celery in broth in the crockpot the day before I make the stuffing. I also add egg to ours. Makes it richer. Happy Thanksgiving and...

      I also cook my onion and celery in the broth. It takes it to a new level and it makes it so much better. I also cook a whole chicken and shred it and use that broth. Ive made it before with store bought broth before when I was trying to make it quick and easy and I just didnt like it. . Tasted like wet cornbread compared to what I was used to. I cook my celery and onion in the broth while my chicken is cooling enough to debone. Im very picky about dressing. I dont like sage or poultry seasoning. Just salt and plenty of pepper. I also add green onions and boiled eggs

    I have always used white bread and have recently started cooking my onion and my celery in my cornbread and add extra eggs to it. I will try this one too!

    That is almost exactly how we make dressing too. We add sage and some shredded turkey or chicken to ours, and we use all cornbread and no biscuits. I will have to try it with biscuits. Also, some boiled chicken livers, diced, would be wonderful in that gravy to pour over that stuffing. Yummy!!!!!!!!!!!!!!

    I love cornbread dressing. It's all I ever had growing up! I'd never thought about adding the biscuits, but I'm going to try that when I cook for Christmas this year. I can't wait. I'd also never thought about using poultry seasoning. Usually I just put in dried sage. I'm with you, I definitely don't like the turkey neck and giblets in gravy or dressing. Probably the worst I've ever had was my first year after moving away from home and I had dinner with a family in the Northwest. They had dressing made from yeast bread and had added not ontly the turkey giblets, but oysters and cranberries. It almost made me gag! lol

      I’m a born and raised Northwest girl. I’ve NEVER been served stuffing with cranberries and/or oysters. I would’ve went home before ingesting that concoction!

    I put apples and pecans and egg in my dressing. I also cook it in a muffin pan. That way, everybody gets the browned bottom and crunchy top.

    I agree with you on the chicken vs. turkey! Mama always boiled a chicken to get broth for chicken and dressing to go alongside the turkey at Thanksgiving. She always had to make extra pans of dressing to send home with her sisters to go in their freezers. She put chopped hard boiled egg in hers. The giblets usually went in the gravy, but I do remember mama using the neck in dressing sometimes, too! I have family here near New Orleans who make "Oyster Dressing". That's one type I shy away from. I've never been much for oysters.

      Many years ago, I made oyster dressing for Thanksgiving. My kids tried it, made a face, and my son said "What's in it this year?" When I told them it was oysters, he said "Why would you put fish in the dressing?" I learned not to mess with tradition. Never again !! 😄

    Man that looks so good.My mom use to use the giblets in her dressing.She made 3 different kinds of dresing. Bread dressing,cornbread ,and oyster dressing.I loved the first 2 but not the oyster dressing.Thanks phyllis.

    you are the only other person I have ever seen besides my family that uses both corn bread and biscuits in the dressing! I also grew up with having my mother and grandmother put the neck meat and giblets into the dressing. Besides that we also added chopped up hard boiled eggs and black olives

      lately I have been cooking mine in the Crock-Pot because it keeps it nice and moist and it frees up the oven for other things

    I'm just chuckling on the inside because to tell you the honest truth.
    Ea. holiday time, I just go out and purchase (now don't laugh) Marie Calendar's
    turkey dinner and I'm done.
    I'll add other sides, i.e. potato salad, can green beans to make it all come together as a little meal.
    But, the dressing is how the ladies in my family (while growing up) makes it. They would all just
    be so shock if they knew how I prepared my little meals, fast forward to today. Thanks again for your teachings. Stay Well/Stay Informed. Peace out.

    Almost like mine. Cornbread and French bread that I toast. Spices are poultry, thyme and sage. I am craving some now. Looks so good!

    Looks so good. I use cooking wine. And use the same Pyrex. Love my Pyrex. Thanks for video. Dressing looks good. I like moist dressing as well.

    Ms. Phyllis, for a big bowl use your Kitchen Aid bowl or a 5-6 quart pot. They really work well because you don't worry about your ingredients flowing out of your bowl. A Georgia Gal!

    Dressing is something that we drizzle on a salad in the UK and we'd call what you've made stuffing - whether it goes inside the cavity or not. That looks really tasty and I'm going to make it next time I do a roast chicken. I just need to find out what is in poultry seasoning as I don't think we have that over here.

      Rosemary..thyme..sage...makes poultry season.

      The McCormick poultry seasoning contains:Thyme, sage, marjoram, rosemary, black pepper and nutmeg.

      Tim YES! I'm in Kentucky & every holiday my mother adds one small envelope of pistachio pudding mix to one thawed container of Cool Whip, one small can of crushed pineapple (juice drained) & one small can of Mandarin oranges (juice drained). She mixes it all together with about half a bag of small marshmallows & calls it Watergate "Salad". Lol

      Julia Chaplin, even if you don't have all the seasonings, make sure you have plenty of sage.
      Here we call the stuffing (that goes in the bird) stuffing and the stuff, that is baked in some type of pan, dressing.
      But whatever you call it, it's very tasty. (I like the crispy, baked dressing best.)

    I like the one where put all the turkey neck and corn bread and biscuits dressing too that's the way I make it if I have Turkey broth I use Turkey broth or chicken broth. Yes I do and its really really good .😄

    Way Better Than Stovetop. Thank you Miss Phyllis. My mom would cook the giblet package contents and use the neck meat and some of the liver to make the gravy.

    Looks good. Thanks Phyllis! This is how I make mine except I use all cornbread, extra sage (I love sage) and I don''t usually bake mine. After sauteeing my onions, and celery, I pour the unsalted chicken broth in over them and get it to a boil, then pour that over my cornbread, leave it wet, salt to taste, and eat immedaitely. I have done it with an egg and baked it before and I really like it but it is just too time consuming and since my family likes it not baked just as good, I just forego the baking altogether. Have a happy Thanksgiving!!!

    Everything you make looks wonderful. Dressing is my favorite food.... I've lived in the south all my life...lived through the 50s and we had to live frugally as most did back then. I'm in TN and the things you cook are very different from what my Momma cooked. I guess even different parts of the south varies as well. I love thin gravy too and I only use poultry seasoning. If I use sage I always use to much. Just found your site. Love it!!
