I haven't seen a boulangerie refusing a CB payment in years, even for a single croissant or baguette. In case you would really need cash just know that there are a lot of ATM in Paris. So avoid carrying cash and especially near any touristic monuments as much as possible. Some taxi driver ask for cash when I don't pay with an app. I tell them the truce: I don't have cash and they should warn customer from the start. Every time it turns out the payment device isn't out of order as they thought.
