If you break/crush the curls, to size you’d like, while they’re dry, you don’t need to cut them. Don’t even toss the crumbs in bottom of box. I use instead of ground meat in recipes. Also, I put in small vacuum sealed bags and don’t need to freeze yet.

I bought my 12lb box almost 9 months ago. I didn't freeze them, they're in the entry way, the coldest place in the house so in winter about 45-50F?? They taste as fresh as the day I got them. It might have to do with the fact that I separated 3 gallon sized zip-lock bags from the big box as soon as I got it: the longest pieces in the box in one bag for making dehydrator jerky (swoon worthy), middle sized chunks for stir-frys, casseroles, anyplace you would use chicken breast cut up in the 2nd, and the 3rd is the crumbs and small bits I use in pasta sauces, soups, tacos, etc. wherever you would use TVP chunks & crumbles. Because I don't open & close the big box every time I cook with these I would imagine it keeps fresher longer too.

How many minutes in total did you need to presoak these curls? I am wanting to try this brand because I bought another type of curls, I think they are called TVP curls and they don't rehydrate well at all. I am thinking there is probably a difference between the two types of methods of making these and making TVP.

BTW soycurls are great in a slow-cooker overnight. Great texture!
Whatever you do please avoid the chik seasoning powder in contact with heat otherwise it may harden.
