Three Agaves in One Margarita: Topolo 2.0

  • I am totally in love with this margarita because it celebrates what three very different agave spirits bring to a margarita. (I know: sotol has fairly recently been declassified from the agave family, but-for the purposes of this recipe-I’m ignoring that.) There’s the classic brightness of tequila, the rich flavor and gentle smoke from mezcal and the beautiful herbaceousness of sotol.

    I first learned about Sotol on our road trip to Big Bend, in a bar in Terlingua, Texas. The bartender showed me and my wife a Sotol based cocktail called the "Matador Norteño." It's my esposa's favorite cocktail ever!
    He said, Sotol is all we drink in Terlingua, because this is the plant that grows in our backyard. Salud!

    Agave is part of the lily family?? Wow. I'm going to buy the Ojo de Tigre just for the coolness factor alone....plus it probably makes a tasty margarita. I'll be careful drinking this tho. I don't want to end up standing on my ear.😅 Thanks Rick!

      Agave (Agave spp.) aren't part of the lily family (Liliaceae) but it is in the asparagus family (Asparagaceae) -- haven't seen anything about the plants for sotol (Dasylirion spp.) being moved into lily family, but a few years ago it was moved from the agave subfamily (Avagoidaea) into the dragon tree subfamily (Nolinoideae)
      Lots of big words there, and it is a fairly confusing bit of taxonomy but seems to have been mostly stable now for 10+ years.

    @Rick Bayless , Hi Rick, I don't know if you've heard the news but Taco Tuesday is now a free trademark for everyone to use thanks to Taco Bell. This means you can continue your Taco Tuesday videos and use the phrase at your restaurants.
    In May 2023, Taco Bell took a bold step on behalf of taco lovers nationwide by filing legal petitions to cancel the two Taco Tuesday trademark registrations. The aim was simple: to free the phrase for restaurants nationwide. The message was clear: Taco Tuesday belongs to everyone, from Taco Bell to Taco John’s to your favorite local taco spot. After all, when tacos win, we all win.
    In late July, Taco John’s courageously decided to abandon its Taco Tuesday trademark registration. This act will benefit thousands of businesses across 49 states, allowing them to now embrace, celebrate, and champion "Taco Tuesdays" freely.
    New Jersey is the only state that doesn't recognize the trademark release at this time.
