    I like Arlene. Such a cool, quiet, gentle vibe from her. She's not here for any "song and dance entertainment"; she's here to show everyone how to cook. I like her as a co-host as Kezzianne doesn't have to drink a pot of coffee to try to keep up with her counterpart.

    Great job on chicken pasteles some cranberries would jazz it up. Was wondering does anyone make paime, thanks for sharing.

      I always have extra leaf and cornmeal after pastelle making so paime is the next obvious thing to do but I don't have a recipe. 😭

    Good morning ladies I just want to say I don't know if anyone told u all this but I love how ur finger nails are nice and short and clean I look at these things because nails carries a lot of bacteria awesome ladies keep it up

    So I can cut my fig leaves to appropriate size, freeze and when ready to use, just thaw and they'll be pliable enough to use ?

    If you cook all and freeze you can steam it to hot up and it will be fresh

      i believe it is one and a half cups of meal and the same amt of hot water with the butter

    Isn't it supposed to be Corn flour?... i was taught corn meal would be to heavy.and break apart..... but thats just my opinion

      I found this confusing as well. But I realised that the Promasa "cornmeal" that us Trinis normally use (the one in the orange-ish bag) is actually a corn flour. I think we mistakingly call corn flours, corn meal and I think thats what happened here. So yes, make sure on the bag it says corn flour.

      You may but butter/margarine adds a richness that cannot be found in olive oil. Makes the cornmeal dough smooth and silky.

      I like to season my cornmeal, too. A little salt, a little sweet, some parsley for garnish...my own flair.

      Kind of. We Trinis 🇹🇹 make the blue draws too but we call it paime. The cornmeal for patelles isn't meant to be sweet, though, most meat filling will have some raisins which creates a sweet and savoury effect.

      She said she washed them before and freezed them. She also said you can "singe" the leaves to make them soft and supple.
