What he didn't explain or didn't know to explain is that it's not for easily cutting onion but for avoiding getting teary eyed while chopping onion. I think the cook knows his techniques well, but I'm not so sure he knows why they are used.

The tomato prep was the most helpful part. So many other videos started with canned tomatoes. That would normally be fine, but I'm specifically trying to use up extra fresh tomatoes.
A pity about the bit of when to add the garlic and basil are missing enjoyed the professionality of the rest though. from researching other videos it's after the onions and Basil is at the very end. Learnt and applied the tomato and onion techniques, both brilliant. A big thanks for those.

What I learned: Basically make Pico de Gallo, saute the garlic and onion before adding the tomatoes and other optional flavorings, and (video ends)

@@sarahwallace7554 From other recipes I've come across since I made this post - add the fresh basil ~5-10 minutes before you think the sauce is done. Adds aromatics. Don't add too early as that will reduce the basil's impact.
@@wiowisp I've started just using San Marzano canned, peeled tomatoes. Much easier, but of course not as fun. However, that's the only way I'll get truly Italian tomatoes where I am. Mix of roma, cherry and 'normal' tomatoes works as well, but it will be a bit sweeter than using San Marzano.
My picky kids loved the sauce. Made a large batch and canned the extras. I did add some tomato paste to thicken it up and a hand blender to chop it up while cooking. I used a bunch different tomatoes from the garden including cherry tomatoes (I didn't seed the cherries but did skin them)

and to finish it off, didn’t show how the sauce came out with a close up.
@@QT_Jeanne you don’t need an immersion blender. The tomatoes without the skin will just reduce into a sauce from the heat.

Thanks for this video! I already know when to put the garlic and the basil. This method is more elaborate than what you see elsewhere but far more refined and the result is worthwhile. I also peel the tomatoes after blanching them but i don't think it's necessary to stop the process in ice water if it is going to be cooked (i do for salads). Then i just squeeze out the seeds and chunk. Also adding 1 ts of sugar takes away the acidity of the tomatoes. I wish i could do the onion trick that easy!!! Clean presentation, chef!
the video doesn't actually show him adding the garlic. it appears to have been edited right at the end of cooking the onions, at which point he says he'll cook the garlic until you can smell it. I'm guessing throwing the garlic in at the same time as onions would have made it bitter, but like others have noted- he's not that great at explaining the whys.

When I get to about the 30 minute mark I put my cooked Italian sausage in there and let it sit for another hour. You can almost pick out certain ingredients but it tastes 100x better for lunch the next day.

I do use a large can of San Marzano crushed tomatoes whenever I make spaghetti red sauce.
