I'm curious if you are rendering the particles on the inside? If a particle is surrounded on all 6 sides by other particles there is no chance you can see it and therefore you don't need to draw it.
The earlier examples in this video don't draw the particles in the middle. The last example doesn't bother figuring out that, because it was fast enough. I made this video a while back though, and I've done some more things to speed up the sand now. Most of the speedup comes from improving how fast it updates particles, rather than rendering them nowadays :)
