    Perfect way to prepare a leg of lamb for a BBQ, cooks very evenly, just season or marinate the lamb according to your taste and you won't go wrong unless you over or under cook.

    Always, always, always look for a boning knife with a little bit of bend. It needs to bend around the bones. Makes your life so much easier.

    My fishing fillet knife is nice & strong.?I use it all the time for Fillet jobs on roasts etc.? works great.?

      A fish filleting knife is perfect for most boning work. If it's too flexible, there may be some tasks which are harder, but a lot of butchers use semiflex knives

      slow it to 50% speed and not only does he sound stoned outof his mind, you can also see that it is a small piece of blood on his finger but it is most likely something picked up on his finger from digging around inside a freshly butchered piece of meat.

    Proper butchering is a dying trade due to long hours and low pay.
