Thank you for the help! I did get a bit confused because my leg isn't as full as yours. I ended up with just the butterfly and the shank. And I also struggled cutting through the knee, but I learned a lot (I needed to cut below the knee, not above it) and I'm confident I'll do better next time

This video is fantastic ! I had no idea what to do with 2 legs, so I watched this 3 times! Now , I have 2 shanks, a nice rump, and some great pieces in the freezer for the summer. A smaller leg with its rump was marinated and went on the BBQ yesterday ..... AWESOME !
For your entertainment ! .... I'm a home cook, I have great knives but I don't have a good boning knife . So .... I wound up with a sharp smaller knife, a sharp carving knife , a scissor, and a 1940s poultry shears . YOU CAN DO THIS !!!

You Tube videos have saved me numerous times !...and likely saves many others.
In this case, I got 2 nice lamb legs at a SUPER nice price ..... then " Now What!" ..... As a butcher, you may have cringed a bit if you saw how I used my own weapons .... but I did it ! Thanks again.

A sharp knife prevents cuts. Cut the meat not your fingers, a blunt knife is a dangerous thing.
