    3-4lb Pork Loin Roast
    2t kosher salt
    1/2t black pepper
    2T flour
    2 yellow onions
    2-3 celery ribs
    3 carrots
    1 head garlic
    2c chicken stock
    1t cornstarch
    Parsnip Purée
    2lbs parsnips
    1t kosher salt
    1c heavy cream
    1c water
    3T cold butter
    Roasted Peaches
    5-6 peaches
    2T brown sugar
    2T butter
    2t vanilla
    2oz bourbon
    fried sage garnish
