For the chicken marinade
6 boneless skinless chicken thighs (you can leave the skin on for more flavour
1 tbsp garaham masala
2 tsp chili powder
2 tsp cumin
2 tsp coriander
1/2 tsp tumeric
1 tsp ground ginger (you can use fresh)
1.5 tsp granulated garlic (you can use fresh)
Chili flakes to taste
Oil to coat
Salt to taste
Pepper to taste
Marinate for at least 2 hours
If you’re using chicken breast we suggest you marinade with a cup of full fat yogurt to help tenderize and then marinate for 2 hours min and bake at 400 for 15 min
For the sauce
Same as above but add
1 cup diced onion
And we recommend you use fresh ginger and garlic
1/2 tomato paste
1 can coconut milk or
1 cup heavy cream or a combination of both which isn’t traditional but tastes delicious
