Will definitely make this over the colder months, it looks delicious! What would you recommend in place of the red wine? And what brand is your portable burner?

Thank you!! Nothing can quite replace the wine, but something acidic like a few tablespoons of red wine vinegar should come close. And you would likely need to add a bit more broth. The burner brand is Elite Gourmet, just added a link to the description box :)

I have had good results substituting kombucha for red wine, especially for deglazing. I’d choose a simple cranberry kombucha. Also I read an article about such substitutions. The author had very good results using one cup, less two tablespoons, of red wine vinegar, completing the cup with two tablespoons of sweet fruit juice - pomegranate/cranberry/apple blend.

Yummy! What about the rest of the broth?

Hello! I freeze the broth for future use, and use it when cooking anything that requires vegetable broth,

Thank you for the title alone. I don't like the mention of meat in vegan recipes. Celebrate plant based.❤❤
