Having once made Ruthenian mushroom stew from BA, I was skeptical I would do it again. But THIS stew, especially over mashed potatoes. My good god. I just made this dish for my wife and mother in law, and there is hardly a drop left! Everyone had seconds and licked the bowls clean. Bravo!
I'm not a mushroom fan.....but....watching Carolina prepare this stew and her wonderful descriptions and instructions made me want to give it a try. Love her presentation and prep abilities. Great demo!

@@latinalibra8907 They are on a time clock to get it filmed quickly, so they are trying to get the steps done in the least amount of time. It's overlooked, is my guess. I know when I cook I want to get every last bit... and waste nothing. I like to think most of us do.
Delicious, we had this as a stew with baguette the first night. The 2nd night over mashed potatoes. If you are new to vegetarianism, this reminds you of open faced roast beef. Will definitely make again. Yummy!

I make a paste from red bell peppers. The one I make does also have tomatoes (I'm not alergic, I just hate the taste), but I'm pretty sure you can make it just out of peppers. It's very easy to make and it freezes well so I highly recommend it. 🙂
Ok, I love this channel, so this doesn't come from any hate! The recipe is fine, but not all mushrooms are the same! For a mushroom recipe, say more than just "pick whatever you like." This recipe is generally ok, but it would be great to know what mushrooms she's using (I assume from the look: baby bella , maitake, and chanterelle). People don't click on mushroom recipes to find out what they can do with button mushrooms (at least I don't), especially when the video is using a variety of something else. Generally, from personal experience, people don't know anything about mushrooms. TEACH THEM! I am Polish and grew up learning about all kinds of mushrooms, am no expert, but do know more than the average American. For me, I guess, I can use what I like. But also from personal experience, if you don't guide people, everyone is going to just use white button, crimini (same as baby bella) or shitaake (in my opinion and observation, is the reason people who hate mushrooms say they hate mushrooms.) If you give someone an appropriately cooked for the dish porcini (with polenta anyone) or creamy morel recipe, depending on what you are doing with what mushroom, people end up loving mushrooms! Again, every mushroom is different. This is a cooking channel, so it should teach people! The video is fine, the chef is lovely, but I was expecting to learn a bit more about different mushrooms... EDIT: Gah... I also just noticed that the logo's not centered...I just realized tonight after watching this channel for a while. I am a designer/animator so paid attention to that stupid detail, and am also just having a bad day (watching your channel to feel better!!). I LOVE this channel, have watched for a long time now, I just noticed the logo watching this video!!
Her way of demonstrating and explaining is so easy to listen to. Her voice is very calming, and just easy to follow.

Water will come out of the mushrooms regardless of when you salt them. The water will evaporate and the mushrooms will fry/sear in the oil.

well tomatoes have umami so maybe you could try soaking dried mushrooms and using that liquid to add the extra umami youd be missing without tomatoes
