As you chop up your feesh veggies, put all your cut offs in the freezer. Once you fill a gallon bag or so, you can easily make your own veggie broth and toss what's left in compost. It is so easy to make the broth and you can freeze it
I am a firm believer that the ingredients they use to process our foods and other products is why we are overweight, also why our over all health isn't the best. And the small changes we make in our eating habbits, even if it is one thing at a time ads up. One of the changes I have been working up to is letting the microwave go. Definitely noticed the changes in you and your mom over the last few months. Congratulations. Like you, I have been decluttering and now trying to get back on track with the eating as well. I had great changes happen with weight over the past 2.5 years with maintaining my proper weight till I fell off that wagon in the past 6 months. I did this 7 years ago for health and an unexpected but wonderful side effect was weight loss! Wish I could have done it when my sons were young like yours!! Processed food is so bad for everyone!!! Way to go Shannon!!!
It is hard to please everyone. We also have to make some extra different things in addition to what we are eating, but as long as everyone is fed I am happy =)

I am currently at 185 , down from 230. Still a way to go. Mostly I have done it by portion control & eating 2 meals a day plus one snack. Also have cut way back on red meat & learning that I don’t need meat of any kind at all my meals.

I noticed your Mom first and then starting noticing the change in you, you look really well and healthy, hubby and l are vegetarians and sometimes l think need to do more natural cooking rather than buying some of the processed food, a few new changes are good, Happy New Year to you all xx
I was lazy too, I think that was my main problem. It was just easier to get the packaged stuff. But now that we are getting used to eating this way, it's becoming easier over time.

I was so excited to see this video! I think healthier eating is part of the minimalism, simpler living process. It’s almost part of the trajectory of changes. Last year, I became more plant forward in our meal planning. I highly recommend adding some vegan sauces to your repertoire. It helps to keep things interesting! Lots of UA-cam videos on vegan sauces. Also, I have had fun making meatballs & burgers out of beans. It’s super easy, especially if you have a food processor. You can bake them in the oven. Looking forward to more videos on this topic.

My 20-year cancerversary was yesterday and I owe being healthy to eating the WFPB way! There are so many antioxidants and compounds in plant food that aid in our health. You look amazing Shannon! If you aren’t familiar, there’s Better Than Bullion paste that is concentrated in a jar and removes the need for the large boxes of broth. Also lots of people are getting milk machines to make nut or soy milk. 😊

This is such a healthy way to eat, way to go!! I was eating Whole Foods plant based for a while, but adjusted a few things. Especially with children (like you mentioned). For oils, I just use non inflammatory avo and evoo and cut out all else. That helps as well if you do need a little oil. Congrats on your healthy changes!
I've been wfpb for 15 yrs and I believe it is what is keeping me healthier and in better shape than my peers at 56. Meals are healthier, cheaper and easier. I've foolishly allowed some junk back in recently...thankfully, it's an easier course-correction than totally revamping our diets.

Processed food = unhealthy choices. My motto is if it comes in a box, or a bottle read the labels before buying it. I think you should include extra virgin olive oil or avocado oil, both are healthy choices. The central nervous system needs oil.
You look amazing! Ive been vegan for 9 years and at the age of 57 the menopausal weight gain has become a problem..so I’ve cut out the sugar and fat and processed food and hoping to shift those extra unwanted pounds.
P.S. I hope this isn't TMI but my family has a history of colon cancer . In 2018 I had a colonoscopy and had a cancerous polyp removed. 2019/clear, 2024/all clear and very good "scope" per my doctor. "Clean as a whistle" not another one for 5 years now I feel so much better and actually am! Not clogging up my body with junk.🎉🎉🎉 Weight/health/image isn't all about weight loss contrary to what a lot of society shows us Glad I finally figured this out at age 56!!!🎉

Have 5 kilo's to much to carry with le now 😢 bit I'm disabled by rheumatism amd do my best to walk every day . Only drink water and coffee without suger or milk for years now, don't like anything else anymore 😊 But in the Netherlands here the wether was bad, so not enough exersice and some sweets aronlund the holidays brrr. I think when it comes to greens, it's an acquired taste LOL. I find the more I eat I get used to the taste and eventually I like it. =) Kind of a slow process.
Whole foods make you feel so much better! I’m not vegan and generally eat well, but do want to incorporate more whole foods in my diet in the new year. It takes more planning and effort, so is also about good habits. Hope you share some recipes. Glad you said your kids eat a bit differently. They need healthy fats for their growing brains.

Every woman should read the intro/first chapter of "Be a Plant-based Woman Warrior!" I am allergic to soy so there are many recipes in that cookbook I have to 'work around but the still taste great! In modern times, nobody has died from low protein but the number of people dying from complications from obesity is skyrocketing. Hmmm, which would I rather have? A fridge full of veggies, or a monthly shot?

thank you, as of June 2024, i found out i have heart problems. drs said you have got to change your diet and less carbs and sodium, caffeine. started Mitterrandian diet and all my boxed meals or packaged just about anything we all ate had everything i need to cut out or lower or get rid of. have not lost weight due to my medicines and able to be as active as i use to be. but i did have my ablation of the heart .so now getting back to work and still watching and changing my diet. i hope to be my better self soon here in 2025. yes, please show more cooking and i have been doing more cook at home meals. my husband likes it more. anyway, i know i will post again on your sight so thank you again.
Thank you for sharing, Shannon! This is really quite eye-opening. I recently stopped eating Corn Flakes and my digestion improved so much. Corn is one of the worst foods for genetic engineering and it probably messes with our hormones and bodies in general. Do you find you have to make more frequent trips to the store eating this way?

Hey Shannon, we eat a lot of whole foods now, but I do still have some processed food. I have decided to transform our pantry into an ingredient pantry and I have not been restocking those processed foods as I run out. I will of course still have some as it's impractical with our current life to have none. I made homemade gluten free, vegan bagels yesterday and they turned out pretty good! They were a bit bland, but I think my palette will get used to that. We do eat meat, but my daughter is vegan so honestly I will still purchase some of those alternative meats for her, but she eats them minimally anyway. I cook for our whole family 3 times a week and at least one is a plant based meal. And she cooks everything from scratch on the nights she cooks for herself. I'm excited about this switch and hoping it will help my perimenopause symptoms haha! Way to go loosing the weight! Does Grant eat vegan as well? It is so hard to hit protein goals on a plant based diet. You have to be really intentional! I still eat meat in part just for protein because it is so hard to keep muscle mass as you age! Congratulations, Shannon! Right before I turned 40, I was able to lose 20 lbs and get back to my prepregnancy weight from age 25. It was a good feeling, so i know that you must be so pleased with the feelings that come with a better weight number. I am now trying to do this again bc I have gained it back over the last 10 yrs. I love that I went vegetarian 3 yrs ago (Except for salmon, I want to keep my omega 3 in check, so I added that back in) Do you have tips on how to make tofu taste good? I have tried it a few times but could never get it to taste good. Thank you for any tips! (maybe tossing it in really good olive oil??) P.S. I have recently switched to oatmilk, silk brand and I love it even more than almond milk. Do you think it is as healthy as almond milk?
Hi Julia, it does feel good to be back to the size I was pre pregnancy. I feel I look like myself again. After my 3rd baby, sometimes I would look in the mirror and think who is that LOL. Anyways, another benefit is having more energy too. I have found tofu tastes best with a lot of seasoning and if it's cooked up after being cut into really tiny chunks. =) I am not sure about oatmilk, I have never tried it.
Shannon, I want to tell you that you do look great. I've noticed the weight loss. Thank you for sharing. In 2008, I lost 60 some pounds...but have gained it back and more over the years. I lost that weight too by eating better, healthier. Cut out most sugar and ate much smaller portions. I love sugar 😢. It's so hard to cut it out, but it's true. If you cut out the sugar, you don't have those nasty cravings that we all get. Can I ask, what does tofu taste like? I am afraid to try it as it, for some reason, just grosses me out just looking at it. 😮
Hi Shannon! That is great that you lost 20 lbs but most of all, that you feel better and are healthier! We aren't vegetarian or vegan (My husband loves his meat and is diabetic so is pretty much on a keto diet of protein and veggies, no sugar ) but we have definitely removed processed foods, sugar, premade foods and incorporated almost all Whole Foods in our diet I haven't lost weight but have maintained a healthy weight which for me is between 150-155. I am also 61 yrs old so it is harder to lose weight I am happy with my current weight , exercise, yoga, bicycling, swimming, and my favorite, gardening!!! Wonderful whole real food is a game changer. I create my own dressings, gravy or broth to avoid very toxic seed oils, very beneficial. A whole avocado mixed with 2 or 3 limes juiced, pinch of stevia, tablespoon of homemade apple cider vinegar, some water, blend , yum
1st - Congrats on the weight loss! It's pretty cool to be able to loose weight and not really trying or dieting, score! I think you're at a perfect place, you look good! COFFEE - NO - on the instant. Real brewed coffee is so much better, more flavor and you're worth it to have actual coffee. I have been using what's called a "pour over" method for a few years now and no going back to any other way. I used to have one of those electric coffee makers. It came time to replace it and I started thinking about alternatives - why - because ECM's are actually a pain in the butt to clean. No one, I know cleans them on a regular basis as recommended. And if you think about it, they're not really sanitary as they never dry out, interior is constantly wet which promotes growth of bacteria and possibly mildew - yuck! So....after some researching came up with "pour over" brewing method. It's the method used by master roasters and recommended way to make a great cup of coffee. I kept my little coffee pot, from the electric maker to use, invested in the ceramic dripper and filters. You start out each morning/time with clean vessels. I grind coffee beans which is also fresher and tastes better, it really doesn't take that long. I did purchase an electric water kettle to get the water super hot, but one that would be easy to clean. I will link the ones I purchased from Amazon, below. I’m currently doing healthy cooking. And want to eliminate sugar and salt. I find it hard because I’m cooking for extra family members. And the younger children it’s a little hard for them to like. So I have to let them get a little different meal than from mine. Eventually I’ll get to cook just for my husband.
I am right there with you. I eat such a healthy diet and having a hard time dropping the creamer. I will try to buy a frother on line. I think if I get rid of this I can loose 20 as well. You look wonderful; but have always thought you did. The processed foods are terrible and something especially sauce packet type items I struggle with. To make different sauces it seems you need so many different spices and ingredients. It does cut down on food bill; to buy fresh foods. We still do eat lean meats but a lot less of it. Can I ask what changes you make for the kids? Do you still buy processed foods for them? Have you cut out cheese? I didn't see any. Thank you for any advice you have. I have 3 kids and that's been the hardest part for us!
I am not going to lie, it's hard with the kids LOL. We have 3 extremely picky eaters. One that won't eat meat or anything that even resembles meat. The one that won't eat meat will eat cheese and the other one that eats meat won't touch anything with cheese LOL. At this point we serve a lot of sandwiches, fruit and veggies, not a lot of packaged stuff, but it's not easy and I don't have a lot of advice for this LOL. I know eventually they will grow up and eat more haha.
I'm a vegetarian that doesn't like eating vegetables 😂. Seriously though, I chronic pain and I have chronic fatigue and need to eat better. The only problem is cooking is super difficult due to my health. There's not a lot of food that I like and that doesn't help 😢

Lots of UA-cam videos on vegan sauces. Also, I have had fun making meatballs & burgers out of beans. It’s super easy, especially if you have a food processor. You can bake them in the oven. My 20-year cancerversary was yesterday and I owe being healthy to eating the WFPB way! There are so many antioxidants and compounds in plant food that aid in our health. You look amazing Shannon! If you aren’t familiar, there’s Better Than Bullion paste that is concentrated in a jar and removes the need for the large boxes of broth. Also lots of people are getting milk machines to make nut or soy milk. 😊

This is such a healthy way to eat, way to go!! I was eating Whole Foods plant based for a while, but adjusted a few things. Especially with children (like you mentioned).
For oils, I just use non inflammatory avo and evoo and cut out all else. That helps as well if you do need a little oil. Congrats on your healthy changes!

I've been wfpb for 15 yrs and I believe it is what is keeping me healthier and in better shape than my peers at 56. Meals are healthier, cheaper and easier. I've foolishly allowed some junk back in recently...thankfully, it's an easier course-correction than totally revamping our diets.

Processed food = unhealthy choices. My motto is if it comes in a box, or a bottle read the labels before buying it.
I think you should include extra virgin olive oil or avocado oil, both are healthy choices. The central nervous system needs oil.
Yes, the body needs some good fats and real salt…Redmonds real salt or Celtic are both great choices.
You look amazing! Ive been vegan for 9 years and at the age of 57 the menopausal weight gain has become a problem..so I’ve cut out the sugar and fat and processed food and hoping to shift those extra unwanted pounds.
P.S. I hope this isn't TMI but my family has a history of colon cancer . In 2018 I had a colonoscopy and had a cancerous polyp removed. 2019/clear, 2024/all clear and very good "scope" per my doctor. "Clean as a whistle" not another one for 5 years now

I would love to know more about your diet, especially any cookbooks or recipe websites (update: I found the links in the description!) you have found helpful. The fact that you lost weight with little to no "exercise" is so encouraging. I need to hear more! I would love to be more plant based but don't really like greens so any advice is greatly appreciated.
I think when it comes to greens, it's an acquired taste LOL. I find the more I eat I get used to the taste and eventually I like it. =) Kind of a slow process.
Whole foods make you feel so much better! I’m not vegan and generally eat well, but do want to incorporate more whole foods in my diet in the new year. It takes more planning and effort, so is also about good habits. Hope you share some recipes. Glad you said your kids eat a bit differently. They need healthy fats for their growing brains.

Every woman should read the intro/first chapter of "Be a Plant-based Woman Warrior!" I am allergic to soy so there are many recipes in that cookbook I have to 'work around but the still taste great! In modern times, nobody has died from low protein but the number of people dying from complications from obesity is skyrocketing. Hmmm, which would I rather have? A fridge full of veggies, or a monthly shot?

thank you, as of June 2024, i found out i have heart problems. drs said you have got to change your diet and less carbs and sodium, caffeine. started Mitterrandian diet and all my boxed meals or packaged just about anything we all ate had everything i need to cut out or lower or get rid of. have not lost weight due to my medicines and able to be as active as i use to be. but i did have my ablation of the heart .so now getting back to work and still watching and changing my diet. i hope to be my better self soon here in 2025. yes, please show more cooking and i have been doing more cook at home meals. my husband likes it more. anyway, i know i will post again on your sight so thank you again.

Thank you for sharing, Shannon! This is really quite eye-opening. I recently stopped eating Corn Flakes and my digestion improved so much. Corn is one of the worst foods for genetic engineering and it probably messes with our hormones and bodies in general. Do you find you have to make more frequent trips to the store eating this way?
Yes, we go to the store more often, but honestly, it's a good thing, we are eating a lot more fresh fruits and veggies!

Hey Shannon, we eat a lot of whole foods now, but I do still have some processed food. I have decided to transform our pantry into an ingredient pantry and I have not been restocking those processed foods as I run out. I will of course still have some as it's impractical with our current life to have none. I made homemade gluten free, vegan bagels yesterday and they turned out pretty good! They were a bit bland, but I think my palette will get used to that. We do eat meat, but my daughter is vegan so honestly I will still purchase some of those alternative meats for her, but she eats them minimally anyway. I cook for our whole family 3 times a week and at least one is a plant based meal. And she cooks everything from scratch on the nights she cooks for herself. I'm excited about this switch and hoping it will help my perimenopause symptoms haha! Way to go loosing the weight! Does Grant eat vegan as well? It is so hard to hit protein goals on a plant based diet. You have to be really intentional! I still eat meat in part just for protein because it is so hard to keep muscle mass as you age! Congratulations, Shannon! Right before I turned 40, I was able to lose 20 lbs and get back to my prepregnancy weight from age 25. It was a good feeling, so i know that you must be so pleased with the feelings that come with a better weight number. I am now trying to do this again bc I have gained it back over the last 10 yrs. I love that I went vegetarian 3 yrs ago (Except for salmon, I want to keep my omega 3 in check, so I added that back in) Do you have tips on how to make tofu taste good? I have tried it a few times but could never get it to taste good. Thank you for any tips! (maybe tossing it in really good olive oil??) P.S. I have recently switched to oatmilk, silk brand and I love it even more than almond milk. Do you think it is as healthy as almond milk?
Hi Julia, it does feel good to be back to the size I was pre pregnancy. I feel I look like myself again. After my 3rd baby, sometimes I would look in the mirror and think who is that LOL. Anyways, another benefit is having more energy too. I have found tofu tastes best with a lot of seasoning and if it's cooked up after being cut into really tiny chunks. =) I am not sure about oatmilk, I have never tried it.
Shannon, I want to tell you that you do look great. I've noticed the weight loss. Thank you for sharing. In 2008, I lost 60 some pounds...but have gained it back and more over the years. I lost that weight too by eating better, healthier. Cut out most sugar and ate much smaller portions. I love sugar 😢. It's so hard to cut it out, but it's true. If you cut out the sugar, you don't have those nasty cravings that we all get. Can I ask, what does tofu taste like? I am afraid to try it as it, for some reason, just grosses me out just looking at it. 😮
I think tofu tastes like whatever seasoning you put on it. Sugar is so addicting and such a hard habit to break, it's a problem for me too.

We aren't vegetarian or vegan (My husband loves his meat and is diabetic so is pretty much on a keto diet of protein and veggies, no sugar ) but we have definitely removed processed foods, sugar, premade foods and incorporated almost all Whole Foods in our diet
I haven't lost weight but have maintained a healthy weight which for me is between 150-155. I am also 61 yrs old so it is harder to lose weight
I am happy with my current weight , exercise, yoga, bicycling, swimming, and my favorite, gardening!!!
I am up to riding my exercise bike 4.5 miles and plan on getting a real bike to ride to the community pool this spring!

Wonderful whole real food is a game changer. I create my own dressings, gravy or broth to avoid very toxic seed oils, very beneficial. A whole avocado mixed with 2 or 3 limes juiced, pinch of stevia, tablespoon of homemade apple cider vinegar, some water, blend , yum

COFFEE - NO - on the instant. Real brewed coffee is so much better, more flavor and you're worth it to have actual coffee.
I have been using what's called a "pour over" method for a few years now and no going back to any other way. I used to have one of those electric coffee makers. It came time to replace it and I started thinking about alternatives - why - because ECM's are actually a pain in the butt to clean. No one, I know cleans them on a regular basis as recommended. And if you think about it, they're not really sanitary as they never dry out, interior is constantly wet which promotes growth of bacteria and possibly mildew - yuck! So....after some researching came up with "pour over" brewing method. It's the method used by master roasters and recommended way to make a great cup of coffee. I kept my little coffee pot, from the electric maker to use, invested in the ceramic dripper and filters. You start out each morning/time with clean vessels. I grind coffee beans which is also fresher and tastes better, it really doesn't take that long. I did purchase an electric water kettle to get the water super hot, but one that would be easy to clean. I will link the ones I purchased from Amazon, below.

It's a great way to substitute, but in some recipes, it doesn't always work the same. I have had to do some experimenting LOL
I’m currently doing healthy cooking. And want to eliminate sugar and salt. I find it hard because I’m cooking for extra family members. And the younger children it’s a little hard for them to like. So I have to let them get a little different meal than from mine. Eventually I’ll get to cook just for my husband.
I use Laird creamer which is made from coconut. Very good.

You look wonderful; but have always thought you did. The processed foods are terrible and something especially sauce packet type items I struggle with. To make different sauces it seems you need so many different spices and ingredients. It does cut down on food bill; to buy fresh foods. We still do eat lean meats but a lot less of it. I am not going to lie, it's hard with the kids LOL. We have 3 extremely picky eaters. One that won't eat meat or anything that even resembles meat. The one that won't eat meat will eat cheese and the other one that eats meat won't touch anything with cheese LOL. At this point we serve a lot of sandwiches, fruit and veggies, not a lot of packaged stuff, but it's not easy and I don't have a lot of advice for this LOL. I know eventually they will grow up and eat more haha.

I'm a vegetarian that doesn't like eating vegetables 😂. Seriously though, I chronic pain and I have chronic fatigue and need to eat better. The only problem is cooking is super difficult due to my health. There's not a lot of food that I like and that doesn't help 😢
A great sweet healthy snack is peanut butter stuffed dates. Yum healthy as well. Just dont eat more thsn two or three a day. Lol lots of fiber 😅
