Easy Grandma’s Minestrone Soup

  • Grandma’s Minestrone Soup recipe is my Italian grandma’s recipe. My Mum gave it to me years ago when I left home so I would eat, and it became my go-to during chemo. As kids we used to call it Jungle Soup because of all the veggies in it, and we loved it. Grandma always used fresh borlotti beans from her garden, but canned are fine. I like to use less water for a really thick soup, more like a stew but you can add stock or water to taste. In Italy, this type of soup is often eaten at room temperature in the summertime. You can top it with fresh basil then leave it to cool down before it is eaten. If you are using soup that’s been stored in the refrigerator, bring it to room temperature before serving it.

    Thanks for sharing your grandmars recipe, we made it and what a fantastic soup it was (certainly a new family favourite) but also thank you so much for the simplicity in the way you explained the method, I know many families and prahaps students will be inspired

    This looks delicious my favourite kind of soup is ministoroni and the way you make this looks lush, I'm a 45 Yr old man and do my own cooking since September 2012 and I've looked at a few ministoroni soup videos here on UA-cam and this is the 1 I'm going to try and replicate and even if mine only turns out half as good as yours then I'm a happy man, I'm going to eat it with some homemade rustic bread and butter and dig into it. Thanks for this video I've hit the like button and subbed.

    Isn't the Holy Trinity: Onion, Green Pepper, and Celery? Soffritto is the base of this soup I believe

    What happened to spinach is minestrone soup. Minestrone always has beans and pasta.

      As does this. There are both red kidney beans and pasta in this soup. But there’s no spinach, although you could use it, just cabbage, as my Grandma used to make it.

      Mamma Mia, if you like pasta in minestrone soup, that is OK. I like it too. But, for goodness sake 1: never cook raw pasta in soup!!! 2: never leave cooked pasta in soup!!! Any cooked pasta kept in soup, makes soup Sour. Acid. Spoiled. If you like pasta in the soup, like me, and any Italian, cook pasta separated, and let everyone put a bit already cooked pasta to the bowl each helping, Buon apettito. CIAO

      Leave the music alone please, it’s so great, excellent choice of music by the way! People that ask to shut the music off are boring people that likes to complain about everything! if you don’t like it, move on!

    Leftover food: Either it goes in the soup, the omelette, the Tea, smoothie, the homemade muesli/energybars or the homebaked bread or the salad.

      Christy Poos you could use spinach, but because it is softer than cabbage, add it 10 minutes before the end of the cooking time so it doesn’t get overcooked.

      Hi ÄnäMäriä ! Because there's already a ton of veggies and beans, we tended to go light on the pasta for this soup. The beautiful part of this soup recipe though is that you can easily add as much or as little as you'd like :)

    I'm a native Italian. Minestrone is of a light green color. Never red. You are making probably the Russian borsch.

      Thanks for your comment. Borsch (or borscht) has beets in it and this does not. This was our founder's Italian grandmother's recipe so it is indeed Italian but perhaps from a different region from yours.

    Not an easy recipe. Too many ingredients, dicing and chopping; also too many steps. Easy recipes are 3 ingredients and 2 steps. An easy soup recipe is Yellow Split Pea soup with ham. Another easy soup recipe is yellow squash and or butternut squash soup.

      Zee Bee sorry you find this hard - the end results are worth it and you’ll get your daily veg servings in too. We suggest buying precut veggies to make things go faster.

      Suggest you find a UA-cam tutorial on canned soups and make sure they have a ring pull cap, wouldn’t want you complaining about having to use a can opener.
